These Mini Brie & Cranberry Puff Pastry Parcels are utterly DIVINE. Made with just four ingredients, plus an egg for the glaze, they would be perfect for any festive parties.
The ingredients are a pack of ready-rolled puff pastry, Brie cheese, cranberry sauce and some hazelnut nibs, with a small beaten egg for the glaze.
The only proviso is that you use whole cranberry sauce, a good brand, or homemade cranberry sauce would work well.
I used a well-known brand of French Brie, but English (Somerset) Brie would also be delicious.
Once made, these Mini Brie & Cranberry Puff Pastry Parcels can be eaten warm, or they can be reheated very easily just before serving.
You can also freeze them once they are baked; just reheat once they have fully defrosted in a warm oven for about 5 to 10 minutes.
Serve these for a Christmas Eve buffet, Christmas Morning breakfast (or brunch) as well as for nibbling with drinks or cocktails.
If anyone has a nut allergy, omit the nuts and grind some black pepper over the egg glaze, or some garlic sea salt.
You can use Camembert in place of Brie if you wish. And, a red onion relish or chutney instead of the cranberry sauce too.

Ingredients
- 1 x 320g ready-rolled puff pastry
- 180g to 200g Brie cheese
- 4 tablespoons cranberry sauce
- 1 small egg, beaten
- Hazelnut nibs
Instructions
- Pre-heat oven to 220C/200C Fan/400F/Gas mark 6. Butter or grease 12 a 12 hole patty tin, NOT a muffin tin.
- Roll out the pastry, and cut into 12 equal size squares/pieces.
- Ease each pastry square into the patty tin, then add a teaspoon of cranberry sauce to each pastry square.
- Cut the Brie cheese into 1" (2.5cm) cubes and sit them on top of the cranberry sauce.
- Bring all the corners of the pastry squares up into the middle, to form a star shaped pie.
- Brush to the to of the pastry parcels with the beaten egg and scatter the hazelnut nibs over the top.
- Bake in the pre-heated oven for 10 to 12 minutes, or until the parcels are puffed up and golden brown.
- Allow to cool for 1 to 2 minutes, before easing them out of the patty tin. Serve warm with extra Cranberry sauce if liked.
