Bramley Recipes
Today’s recipe is one that we have just devoured, not more than two hours ago, and is hot of the recipe press. Three Cheese & Apple Puff Pastry Ring is my latest creation for Bramley Apples and all of the producers who grow these heritage British apples. I saw the idea for a pastry ring online, and although the original recipe had ham, tomatoes, cheese and olives in it, I immediately thought of adapting the recipe for a tasty vegetarian summer supper dish, and voila, here it is!
As part of my ongoing collaboration with Bramely Apples and Bramley Recipes, my brief for August was to create a new recipe using the apples WITH cheese. Now, as a confirmed and fully paid up cheese lover, this was a challenge made in heaven, and especially as apples and cheese are perfect culinary partners on crime; after all, “an apple pie without cheese is like a kiss without a squeeze”, as the age-old saying goes, and in Yorkshire, where I come from no self-respecting housewife or baker would ever put a fruit cake in the table without some cheese to accompany it.
Today’s recipe for Three Cheese & Apple Puff Pastry Ring, is an easy one, it’s really an assembly job, which makes it perfect for busy mum’s and dad’s. Ready made puff pastry is filled with cream cheese, spring onions, Bramley apple slices, blue cheese and Grana Padano cheese before being baked until the pastry is crisp and flaky, and the apples are soft and just caramelised around the edges; the cheese will be melty and unctuous and the whole combination of ingredients works so well together…..making it a real kiss WITH a squeeze kind of recipe.
Serve this pastry ring with seasonal salad and maybe for the winter months, a baked potato and some steamed veggies would be nice. If you can’t find ready-made puff pastry in a circle, then just cut a circle out of a ready rolled sheet of rectangular puff pastry. And, if you are catering for confirmed carnivores, then some crispy fried bacon or shredded ham would go beautifully with the cheese and apples. Three Cheese & Apple Puff Pastry Ring

Ingredients
- 1 x 230g round of ready made puff pastry
- 4 tablespoons cream cheese
- 4 spring onions, trimmed and finely diced
- 1 or 2 Bramley apples depending on size, cut into thin wedges (cored but not peeled)
- 150g Bresse Bleu cheese (or blue cheese of your choice)
- 1 free range egg, beaten
- 50g grated Grana Padano cheese (or Parmesan cheese)
Note
This easy to make and delectable open puff pastry tart has tangy Bramley apples in it, as well as a combination of three tasty cheeses. The puff pastry ring is perfect for any family supper dish when served with salad, or as part of a picnic or the school and office lunch box.
Directions
Step 1 | Pre-heat the oven to 200C/400F/Gas mark 6. Grease and or line a large baking sheet with grease proof baking paper. |
Step 2 | Lay the round of puff pastry onto the prepared baking sheet, and cut a star in the centre, leaving about 5cms (2") border from the edge of the star shape cuts in the pastry. |
Step 3 | Spread the cream cheese around the outer edge of the pastry circle, then scatter the spring onions over the top; arrange the sliced Bramley apples over the cream cheese and onions, them add the blue cheese. |
Step 4 | Brush the beaten egg around the outer edges of the pastry circle and over the cut star shape, then bring each cut triangle shape over the filling and seal. Continue to do this until all of the triangles have been folded over the filing and sealed to form a ring or a crown shape. |
Step 5 | Brush the top of the pastry ring with the rest of the beaten egg and then sprinkle the grated Grana Padano cheese over the top. |
Step 6 | Bake in the pre-heated oven for 25 to 30 minutes until the pastry is crisp and golden brown and the cheese has melted. |
Step 7 | Cut into slices and serve with a seasonal salad. |
Step 8 | Perfect for picnics and the school or office lunch box. |
