A fabulous recipe for Easy Air Fryer Roast Potatoes that results in crispy roasties with a fluffy inside.
There’s no need to parboil these deliciously crunchy on the outside and fluffy inside roasties.
The trick is to pre soak the cut potatoes for a couple of hours before air frying them.
The pre soaking helps eliminate excess starch which makes the roast potatoes cook faster with a crispy finish.
I know it’s the current trend to add herbs and spices to roast potatoes, but I’m a bit of a purist when it comes to classic British roasties.
I use oil, salt and pepper in my recipe, and I think that’s all you need! You can of course add extra seasoning if you wish, but a good spud just needs salt and pepper.
I used my Ninja Foodi Dual Zone Air Fryer to cook these; however I could have used any air fryer where you can control the temperature and that has a basket.

Use any air fryer you have – I have a Ninja Foodi.
Try to choose potatoes that are all purpose or that are for chips and roast potatoes.
Peeled potatoes are best soaked overnight, making them easy for cooking next day.

Ingredients
- 8 large potatoes, peeled and cut into 2” (5cm) chunks
- 1 tablespoon rapeseed oil
- Salt
- Cracked black pepper
Instructions
1. Soak the peeled and cut potatoes in clean water for 2 hours at least, or overnight.
2. Drain them well and pat them dry in a tea towel. They must be completely dry before cooking.
3. Place the potatoes in a large bowl and add the oil and salt and pepper to taste. I usually add 1 teaspoon of salt and 1/2 teaspoon of cracked black pepper.
4. Stir well so that all the potatoes are covered in oil and the seasoning.
5. Place the potatoes in to the air fryer basket - I use both sides of my Ninja Foodi Dual Zone Air Fryer for this amount of potatoes.
6. Set the air fryer to “air fry” which should be 200C and set for 30 minutes.
7. Start the air fryer and half way through stop the air fryer and give the potatoes a good shake. Restart the air fryer again and continue to cook until the time is up.
8. Shake the potatoes well and tip into a large serving bowl. Serve the potatoes immediately.

I don’t use my air fryer terribly much but when I do it’s almost always for potatoes. They really are wonderful for those!

Great tasty recipe for roast potatoes. Something everyone in our house loves to eat. Have you tried adding Himalayan salt as a garnish just before serving? It gives some great added texture.

Your remarks about not using all sorts of added flavourings to a roast potato are music to my ears. It’s become next to impossible to find roast potatoes in a reastaurant these days without them being covered in garlic, rosemary and all manner of other flavouringst that don’t belong on them. (Don’t get me wrong – I love garlic and rosemary, but not on my roasties!)
I would even go one step further than you, and suggest omitting the black pepper – the only seasoning my roasties get before cooking is a sprinkling of salt.
