An Energy Saving Recipe for Christmas
Today has been mostly about Christmas prep…..making sausage rolls and mince pies for the freezer, and a big batch of my Pressure Cooker Spiced Red Cabbage, cooked in under 10 minutes in the pressure cooker!
What a revelation that was, still the same spice infused red cabbage, but instead of cooking for 2 to 3hrs, it took only 10 minutes and is just a delicious as the long baked version.
This is a delicious festive recipe using red cabbage, fragrant spices & apples, and the the spicy smell pervades the kitchen & indeed the rest of the house and heralds the start of my festive baking and freezing season – who needs expensive pot-pourri!
This cabbage can be kept warm for long periods, reheated and also freezes very well, making it a very well behaved recipe.
Just as good as my traditionally cooked Red Cabbage with Apples Recipe, but using a lot less energy, which is good during these tough times with high energy bills.
Make it now for Christmas Day, then when it’s cold, pop it in the freezer as I have done. It freezes really well, and once defosted it just needs reheating gently in the microwave or on the stove top.
I used my Kitchen Aid Food Processor to chop the red cabbage, and it took half the time to do it that way, but you can still cut it by hand if you wish.
Notes:
For a vegan version use a plant based spread or a little rapeseed oil.
Use pears in place of apples.
Use shallots in place of onions.
Ingredients:
- 900g to 1 kilo red cabbage, shredded finely
- 4 large onions, peeled & finely diced
- 4 large apples, NOT peeled, finely diced
- 4 garlic cloves, peeled & finely minced
- 4 tablespoons soft brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- salt & pepper
- 4 tablespoons red wine vinegar
- 25g butter

Pressure Cooker Spiced Red Cabbage

- 900g to 1 kilo red cabbage, shredded finely

Instructions
1. Discard outer leaves of the red cabbage and cut into quarters. Cut out the central woody root and then shred the quarters very finely. Place in a bowl. Cut the apples into quarters, core them & then slice into fine dice and set aside in another bowl.
2. Place peeled and diced onions into another bowl & make sure all the other ingredients are measured and to hand.
3. Take the inner bowl out of the pressure cooker and start layering the ingredients: red cabbage, salt & pepper; apples, onions, garlic, then the spices & brown sugar;keep layering this way until everything has been used up.
4. Dot the top of the red cabbage with the butter and pour over the red wine vinegar.
Place bowl back in, seal and cook on high in the pressure cooker for 10 minutes.
