These Air Fryer Coronation Chicken Scotch Eggs will be perfect for our village street party for the Coronation of King Charles III & summer picnics
A Delectable No Fuss and No Mess Recipe
I am delighted with this new recipe of mine for Air Fryer Coronation Chicken Scotch Eggs. Basically, I used chicken sausages, with curry seasoning and a little bit of mango chutney.
They turned out a treat, beautifully cooked, and with no excess oil or fat; and, there wasn’t the usual mess of cooking them hot fat etc to contend with either.
They are still moist inside, and crisp on the outside, and I think they would be the stars of the show for any street parties, picnics, buffets, or for a family tea tray supper.
You can of course use pork sausages in place of chicken sausages, but you will need to omit the curry powder and mango chutney.
I used 2 x packets of Heck chicken sausages, about 275g to 300g a packet. There’s 10 chipolata sized sausages in each packet, but it’s the weight that is crucial.
You will need 200g of sausages or sausagemeat per egg – I used medium sized eggs, so obviously larger eggs will need more, and smaller eggs will need less.
These Air Fryer Coronation Chicken Scotch Eggs are going to be made for our village street party for the Coronation of King Charles III.
I’ll be serving these with salad, pickles or chutney for our Coronation street party picnic style meal. However, we’ve also enjoyed these for supper with chips and coleslaw one evening.

Air Fryer Coronation Chicken Scotch Eggs

Ingredients
- 2 x packets of chicken sausages, 580g to 600g total weight
- 2 teaspoons medium curry powder
- 1/2 teaspoon garlic granules
- 1 tablespoon mango chutney
- Salt and pepper, to taste
- 6 medium eggs, hard boiled, peeled
- 100g plain flour
- 1 egg, beaten
- 120g breadcrumbs, I used panko
- Low fat spray, such as Frylight
Instructions
1. Prepare the sausage meat coating: Add the curry powder, garlic granules, mango chutney, salt and pepper to the sausage meat, mix well with your hands and then divide into 6 portions on a floured board. (Make sure your hands are floured to stop the sausagemeat sticking too much)
2. Prepare the flour, beaten eggs and breadcrumbs: Add the beaten egg in a shallow bowl with a tablespoon of water and leave to one side. Put the flour in another shallow bowl or plate with a good seasoning of salt and pepper, and then put the breadcrumbs/panko on another plate.
3. Making the Scotch Eggs: Roll an egg in the seasoned flour. Then flatten and mould a portion of sausage meat around each egg, making sure there are no gaps. Coat the sausage coated egg in the beaten egg and then in the breadcrumbs. Coat all the shelled boiled eggs like this and set them to one side. NB: Make sure you have a floured board to shape and flatten the sausage meat so it doesn't stick to the work surface.
4. Cook the Scotch Eggs: Line your air fryer with greaseproof or baking paper, and spray some of the low fat oil over the lining. (I used my Ninja Foodi Dual Drawer Air Fryer)
5. Spray some fat over the coated eggs, and place them in the lined basket or drawer. Spray them again.
6. Set the air fryer to 190C and set the time for 15 minutes. Start the air fryer. Half way through cooking, using some tongs, turn the eggs over and continue to cook.
7. At the end of the cooking time, the Scotch Eggs should be golden brown and crisp on the outside. If you want them to have a crisper or darker finish, cook them for a further 5 minutes.
8. Serving: Serve the eggs warm or at room temperature with salad leaves and/or chips with pickles and chutney.
