Seafood is a diverse type of cuisine which most people love, and with its varied serving ideas it can be used in everyday dishes as well as gourmet ones, so you’ll never get bored with it. There are so many different dishes you can make every day, for both family style recipes and dinner party style dishes.

If you love seafood but you don’t often often cook with it, now is the time to make a change and try your hand at making some amazing meals this month, ones which have seafood at their very core. Today I’m sharing six lovely recipes, from an everyday comforting fish pie to a spicy Chinese style stir-fry. There should be something for everyone here!
NB: All recipes serve 2 to 3 people with added accompaniments on the side.
Sweet Potato Cod Pie
When we thinking about fish recipes which will please the whole family, there is one option which is a perennial favourite, and that has to be a comforting fish pie. Today’s recipe which has a sweet potato mash is the perfect choice for a low-carb option. Fish pie is a comforting dish which everyone can enjoy during the winter as well as being a meal that is easy to make and assemble.
Ingredients:
2 cod fillets, about 125g each
300ml milk
1 tbsp butter
1 tbsp flour
2 tbsp tarragon
2 tbsp mixed herbs
2 large sweet potatoes, about 400g to 450g, peeled
50g mature Cheddar cheese, grated
Salt and pepper, to taste
Method:
To start off this warming pie, firstly pierce the sweet potatoes and microwave them for 10 minutes, mash them up and season with salt and pepper, adding some cheese for extra flavour. (You can also boil them too)
For the fish pie filling: In a saucepan, melt butter and add the flour. Whisk until smooth and pour in the milk slowly, constantly whisking as you go. After a few minutes you will see that the sauce starts to thicken, and at this point you can add the cod, cut into pieces, as well as your herbs, and some salt and pepper. Simmer for 5-10 minutes and then transfer to a pie dish.
Spoon the mashed sweet potatoes over the top and bake at 200C/400F/Gas mark 6 for 25 minutes until it’s bubbling and crisp. Serve with peas or seasonal vegetables.
NB: You can also make portions of this pie in smaller ramekins and freeze them for later on.
Hoisin Salmon Stir Fry
This recipe has lots of Chinese flavours that we associate more with chicken and duck, however Seafood can be a great option if you want a lighter meal to enjoy during the week. This stir fry is simple and effortless and it makes the most of simple ingredients to bring lots of Asian flavours to your plate. Here is how you make this wonderful midweek dish…..
Ingredients:
2 salmon fillets, about 125g each
200g noodles
100g red pepper
100g baby sweetcorn
100g asparagus
1 tbsp honey
2 tbsp peanut butter
2 tbsp soy sauce
2 tbsp tomato puree
1 tbsp Chinese five spice
Method:
To start off, mix together the spices, soy sauce, tomato puree, honey and peanut butter for a simple and sticky Chinese sauce. Next up, lay the salmon on a baking tray and season with salt and pepper before baking in the oven for 15 minutes at 180C/375F/Gas mark 5.
While this is cooking you can add your sauce and veggies to a wok and stir fry for 2 to 3 minutes, before adding noodles. Once everything is ready, spoon the noodles in to a bowl and flake the salmon over the top of the noodles.
This is a great dish for a night when you want to experiment with flavours and it is ideal for everyone in the family.
Cajun Prawn Pasta
If you are looking for a meal which is super comforting as well as tasty, you can try out this simple prawn pasta which will only take 20 minutes to make and is a great option for a big party of people.
Ingredients:
200g Prawns
200g penne pasta
2 tbsp Cajun seasoning
1 clove garlic
300ml milk
1 tbsp double cream
Cheese for serving
Method:
This is a quick meal option which can be done within a short time frame during the evening for your family. To start off add some butter to a pan and then add in your prawns along with some garlic. Let all of this cook for around 8 minutes, turning over your prawns halfway through, and then take the prawns out of the pan and set aside.
Into the pan, add milk, uncooked pasta and Cajun seasoning and simmer for 10 to 15 minutes, adding a little more milk if it needs it.
Once the pasta is cooked, add the prawns back into the pan along with a little splash of cream and some cheese such as Parmesan cheese for extra flavour. Serve in a bowl and add some more cheese for a filling and hearty fish supper.
Lobster Mac and Cheese
Why not vamp up a mac and cheese recipe by adding some lobster into it and this is a fabulous and luxurious dish to enjoy.
Ingredients:
2 cooked, shelled and dressed lobsters (you can ask a fishmonger for these)
200g macaroni pasta, cooked
200g mature Cheddar cheese, grated
50g Mozzarella cheese, grated
50g Parmesan cheese, grated
50g breadcrumbs
1 tbsp butter
1 tbsp flour
300ml milk
1 tsp garlic powder
1 tsp paprika
1 tsp nutmeg
Method:
Start off by melting butter in a pan. Once melted, add the flour and whisk this until combined. Add milk slowly and whisk to create a thick roux which will make a wonderful bechamel base for your dish. Once the sauce starts to thicken add the grated Cheddar cheese and stir, then add the herbs and spices.
Add the lobster to the sauce in small chunks. Then add the cooked macaroni to the pan and stir until combined. Spoon it all into a baking dish, and top with Mozzarella cheese, Parmesan cheese and the breadcrumbs, then bake for 15 minutes at 200C/400F/Gas mark 6 until its bubbling and golden brown.
Herb Crusted Cod And Chips
How could we possibly make a list of recipes for seafood and fish without sharing the most popular British dish! Fish and chips are a staple in many households and this less fatty alternative is great if you want to avoid the batter during the week. With homemade chips and garden peas there is no meal quite like this.
Ingredients:
2 cod fillets (or any white fish)
100g breadcrumbs
50g Parmesan cheese
2 tbsp mixed herbs
1 egg
Zest of 1 lemon
2 large baking potatoes
2 tbsp oil
Salt and pepper
Garden peas to serve
Method:
For the chips: Peel your potatoes and then cut them into large chip shapes. Place these into a saucepan and bring to the boil, boil for 5 to 6 minutes until slightly soft. Drain and place them in a bowl with salt and pepper and oil. Mix well and then spoon them into a baking tray. Place in the oven at 200C/400F/Gas mark 6 and bake for 30 to 40 minutes, turning halfway.
For the fish: Add breadcrumbs, herbs, zest and cheese into a bowl, and egg into another. Dip the fish into the egg, then breadcrumb mixture, back into the egg, and then back into the breadcrumbs once more. Place on a baking tray and bake for 30 minutes at 200C/400F/Gas Mark 6.
Serve this all up with your favourite side dishes, tartar sauce and a wedge of lemon.
Foil Packet Hake With Veggies
If you are having a busy week and need a quick meal to please everyone, then this foil packet dish is ideal. Hake is the fish of choice for this meal but you can use any white fish you like.
Ingredients:
2 hake fillets
8 cherry tomatoes
½ head of small broccoli, cut up into florets
8 spears of asparagus
Lemon, juice and zest
1 tsp paprika
½ sweet potato, cubed
30g Parmesan cheese
2 tbsp butter
Method:
Cut two large pieces of foil. Add the broccoli and sweet potato to the foil and bake with butter for 10 minutes. Add all other ingredients to your foil packet apart from the Parmesan and bake for 25 minutes at 180C/375F/Gas mark 5. Season with salt and pepper and serve on a plate with some Parmesan sprinkled on the top. This dish couldn’t be easier for a midweek meal.
