Today’s recipe for Italian Sub Sandwich with Prosciutto di Parma Ham comes just in time for the heat wave that is heading our way in the UK; a “sub” or “submarine” is a fabulous “long style” sandwich made famous in the States, but this sandwich has pure Italian style and taste at its heart with the use of Prosciutto di Parma as the main ingredient. Easy to assemble, and also to transport, this sandwich would make the perfect lunch time meal or snack for all of your “al fresco” dining, as well as being the star of any summer picnics too.
Prosciutto di Parma, or as it is also known, Parma Ham, is a regular staple in the Lavender and Lovage kitchen; we love its full-bodied flavour and silky texture, and I use it for all sorts of recipes, such as antipasto platters and for wrapping seasonal fruit in as an amuse bouche. Parma Ham is a Protected Designation of Origin (PDO) product and is 100% natural with no nitrates and nitrites, which is good news, and has no additives and preservatives (except sea salt). The drying process that Parma Ham goes through creates a ham that is very low in fat content, with many mineral salts, vitamins, antioxidants and easily digestible proteins.
Prosciutto di Parma is produced in the hills surrounding the Italian town of Parma in the area of Emilia Romagna in Italy. The unique taste of Parma Ham is dependent on the traditional production process passed down from Roman times, carefully controlled by the Consorzio del Prosciutto di Parma. Only hams that have passed strict curing regulations approved by the EU can be awarded the stamp of the Ducal crown – a five-pointed coronet logo with PARMA in the centre which is branded onto the ham’s skin. As I said before, it’s one of those staple ingredients that I always have in the fridge for impromptu snacking, pasta, pizza and other Italian recipes.
My recipe for my summer sub sandwich is shared below, along with some other ideas how to serve this delectable ham. And, don’t forget, there’s no need to trim the fat off the slices of ham, the thin strip of ham that surrounds each slice, adds taste and texture, and almost melts in the mouth. Ingredients
- 1 small hot-dog or submarine roll, per person (about 5"/12.5cm long)
- Drizzle of extra virgin olive oil
- Dried oregano
- Fresh lettuce leaves (of your choice)
- 1 small vine-ripened tomato per person (thinly sliced)
- 1/4 red onion, per person (very thinly sliced)
- 25g Parmigiano-Reggiano cheese per person (shaved into thin slices with a vegetable peeler)
- 2 slices of Prosciutto di Parma per person
- Sea salt and ground black pepper, to taste

Directions
Step 1 | Cut the submarine or hot-dog rolls in half through the middle, keeping both halves attached on one side; then drizzle some of the olive oil over both sides. Sprinkle the dried oregano over both sides. |
Step 2 | Start to layer the sandwich like so: on one side of the roll arrange the lettuce leaves, sliced tomatoes seasoned with salt and pepper, red onion slices, Parmigiano-Reggiano cheese and finally arrange the two slices of Prosciutto di Parma ham over the top. Cover the filling with the top half of the roll to make a sandwich. |
Step 3 | Eat immediately, or wrap in grease proof paper secured with string for transporting to a picnic. |
Step 4 | Can be made up to 2 to 3 hours in advance for ease. Wrap the sandwiches and keep in a cool place or in the fridge. |
Recipe & Eating Ideas:
• For a classic antipasto, arrange three to four slices of Parma Ham on a plate, accompanied simply by Italian cheeses and bread.
• Drape Parma Ham slices around fresh figs or melon slices. Or try other fruits with
complementary flavors, such as ripe pears, papaya, pineapple and kiwis. To
create an elegant salad, top mixed greens with slivers of Parma Ham and curls of
Parmigiano-Reggiano.
• Make an Italian-style panino by layering slices of Parma Ham on a crusty roll with
fresh or smoked mozzarella, tomato slices and a sprinkling of olive oil. Wrap
Parma Ham slices around bread sticks, lightly cooked asparagus spears or grilled
shrimp. Dice or chop thick-slices of Parma Ham to flavour pastas, rice or risotto,
or vegetables such as asparagus or peas.
• Sauté finely diced Parma Ham with onions, carrots, celery and herbs to make a
soffritto, or flavor base, for sauces and many other dishes. Parma Ham also
makes a wonderful cooking ingredient so don’t be afraid to experiment. It adds
personality to pasta and imparts a delicious flavour when wrapped around fish or
chicken and cooked in the oven. It is excellent enjoyed with white wines!
