Three Cheese Savoury, Coronation Chicken and Cream Cheese & Cucumber Sandwiches
Today’s recipe for A Trio of Afternoon Tea Sandwich Fillings, is actually three recipes. I meant to post these sandwich fillings in time for the King’s Coronation, but time ran away with me.
These are three of my favourite sandwich fillings, along with jam sandwiches, and Watercress and Egg & Cress sandwiches.
They make a wonderful trio for all, with a punchy Three Cheese Savoury filling, a classic Coronation Chicken filler and an elegant Cream Cheese & Cucumber filling.
I have a Cheese Savoury sandwich filler already posted on Lavender & Lovage, however, this version relies on cream cheese as the filler, with Red Leicester and Cheddar cheese adding to the mix.
You can also add finely chopped spring onions to this fabulously cheesy sandwich filling, or even chives or wild garlic when it’s in season.
My classic Coronation Chicken recipe for today’s A Trio of Afternoon Tea Sandwich Fillings, is an easy one, and perfect for using up any cold cooked chicken.
It’s simply a melange of cold cooked chicken cubes, with mayonnaise, curry powder, mango chutney OR apricot jam, spring onions, with optional sultanas and flaked almonds.
Finally we come to the simplest of sandwich fillings, but the one that is my most popular at picnics, afternoon tea and my Sunday tea tray suppers……Cream Cheese & Cucumber.
I use a well-known (and high quality) cream cheese that is flavoured with herbs and garlic, good salted butter and thinly sliced cucumbers.
I usually make these in crustless white bread, but we enjoyed them last time I made them in wholemeal (wholewheat) bread.

Culinary Notes
- Use white or wholemeal sliced bread, with or without crusts.
- Cut sandwiches into fingers (3 per sandwich) or into 4 dainty triangles.
- In place of Red Leicester cheese, use another hard cheese such as Double Gloucester or Lincolnshire Poacher.
- For lighter sandwich fillings, use reduced fat spread, reduced fat cream cheese, reduced fat mayonnaise and reduced fat cheese.
- Curry paste can be used in place of curry powder – mild or medium is best.

Cream Cheese & Cucumber: Spread the slices of bread with the butter. Then spread cream cheese on 4 slices of bread. Arrange the cucumber slices ovee the cream cheese and lay the other slice of buttered bread on top. Cut into fingers or 4 triangles to serve. (Makes 4 sandwiches)
Coronation Chicken: Make the binding sauce: mix the mayonnaise, curry powder (or curry paste), chutney (or jam) together. Then add the spring onions and sultanas if using, as well as the almonds. Season to taste adding more curry powder if needed, then add the diced cooked chicken. Lightly mix together. Store in the fridge until needed. (Makes 4 to 6 sandwiches)
Three Cheese Savoury: Put all of the ingredients except the milk into a bowl and mix thoroughly to make a stiff paste. Add the milk to loosen it if needed. Season to taste, cover and refrigerate until needed. (Makes 4 sandwiches)

- Three Cheese Savoury:
- 150g cream cheese
- 80g Cheddar cheese, grated
- 80g Red Leicester cheese, grated
- Freshly ground black pepper
- 2 tablespoons milk
- 2 spring onions, very finely diced (optiona)
- Coronation Chicken:
- 150g to 180g cooked chicken breast, cut into small cubes
- 4 tablespoons mayonnaise
- 1 heaped teaspoon mild or medium curry powder, to taste (OR 1 tablespoon curry paste)
- 2 heaped teaspoons mango chutney, or apricot jam
- 2 spring onions (trimmed and finely diced, reserve some of the green tops to serve)
- 2 tablespoons sultanas, OPTIONAL
- 25g toasted flaked almonds
- Salt and pepper to taste
- Cream Cheese & Cucumber:
- 200g cream cheese with herbs & garlic (OR plain cream cheese to taste)
- 1/2 cucumber, very thinly slices (can be peeled too if you wish)
- Softened salted butter, to spread
- BREAD:
- 8 slices bread for EACH sandwich filling, white or wholemeal

NB: To cook the chicken breasts, it is best to poach them in a little stock; for 2 to 4 chicken breasts, pour boiling water into a saucepan then add a vegetable stock cube and half a lemon, cut into wedges. Add the chicken breasts and poach them gently, covered, for 10 minutes; after 10 minutes, take the pan of the heat, keep it covered and allow the chicken breasts to cool in the stock until you need to use them - this keeps them moist. Keep the stock for soup, sauces or as a chicken stock.

Quite tempting, though I suspect I will have to make them for myself.
I think it might be nice to make selection like this, with a couple of scones, a slice of cake and some cream and a few strawberries, as a thankyou gift for a friend or family member- with a hearty mug of tea too, of course.
