Based on a recipe on the SPAM® UK website, this sandwich filling is made from 100% store cupboard ingredients, and is absolutely delicious. Use it any sliced bread, whether it be commercially made white bread, wholemeal bread or in homemade sourdough bread
For an authentic Wartime sandwich, you can use this spread in a National Loaf. Of course this sandwich spread filling can be used for any occasion or any time of the year, and not just for a VE Day party, but with SPAM® Chopped Pork and Ham being an iconic Wartime ingredient, it would make a great addition to any VW Day 75 gathering in 2020.
VE Day 75th anniversary celebrations may now be a little muted over this bank holiday weekend, from the 8th to 10th of May, but that shouldn’t stop you throwing a small party at home if you wish. And, the one food that truly evokes the spirit of World War II and will be a welcome addition to VE Day 75 soirees across the UK, is SPAM® Chopped Pork and Ham.
This store cupboard favourite is made from a minimum of 90% shoulder pork and leg ham, and first came to the UK in 1941, feeding the nation throughout WWII and becoming a staple food for many households for decades to come. SPAM® Chopped Pork & Ham was born out of a meat crisis. Not too little meat. But too much meat. The Hormel Food Company of Minnesota created pork products and they had an excess of pork shoulder. President Jay Hormel hit on an idea. He ground pork shoulder with ham and cooked it in the can to create a long life meat product. SPAM® Chopped Pork & Ham first made its way onto people’s plates in the US on July 5th 1937….or one of the ingredients like sourdough starter in a sourdough recipe
In late 30’s America, it was the beginning of the advertising jingle and Jay Hormel wanted a snappy new name for the product. He put up $100 reward which would be over $1000 in today’s money. Rejecting hundreds of ideas from colleagues and friends he threw a New Year’s Eve party offering a free drink for every name idea. At some point in the evening a New York Radio actor named Kenneth Daigneau uttered the now legendary word ‘SPAM’ and he was $100 richer. Legend has it that he concocted the name from the description of ‘Spiced Pork and Ham’, or maybe it was just his slurred pronunciation after all those free cocktails!

Square Sandwiches or Posh Triangles?
When I was growing up I once went to a Birthday tea at a friend’s house and saw posh cut triangle sandwiches for the first time! At home, mum only used to ever cut them into squares, and so I’ve been slightly obsessed ever since then about which is the correct way to cut your sandwiches!
Whether they be triangles, squares, or even “ribbon” tea sandwiches, it really doesn’t matter how you cut your sarnies using today’s recipe for SPAM® & Eggs Sandwich Filling. - Combine SPAM® Chopped Pork & Ham and remaining ingredients. Cover and refrigerate at least 1 hour, up to 24 hours.
- Spread on sliced buttered bread with sliced cucumbers to make 4 sandwiches.
- Cut into quarters and serve with crisps on the side.
Notes:
You can easily double this recipe to make 8 rounds of sandwiches. Use a whole 340g tin of SPAM® Chopped Pork and Ham for this.
Serve the sandwiches with lettuce instead of cucumbers, or sliced tomatoes.
Makes a tasty jacket potato filling.
Can be used in a salad, serve in the middle of a plate of fresh salad leaves with tomatoes, cucumber and spring onions.

Ingredients
- 1/2 340g can of SPAM® Chopped Pork and Ham (170g) very finely diced
- 3 eggs, hard boiled and shelled
- 3 tablespoons mayonnaise
- 2 teaspoons very finely diced pickled silverskin onions
- 1 heaped tablespoon finely diced celery
- 1 heaped tablespoon sweet pickle, or chutney
- 1/2 teaspoon English mustard
- 1/2 teaspoon white sugar
- White pepper, to taste
- 8 slices of bread and butter, to serve
- 1/4 cucumber, sliced, to serve
- Crisps, to serve
