These easy to make Pigs in Blanket and Cranberry Turnovers use only five ingredients plus a beaten egg for the glaze.
The recipe yields between 8 and 12 turnovers, depending on how big you cut the puff pastry squares, and they are baked in the air fryer.
8 Pigs in Blanket and Cranberry Turnovers give you 4 portions for brunch, lunch or supper, when served with salad and extra cranberry sauce.
12 smaller turnovers are perfect for parties and buffets, as well as for the school or office lunch box.
These delightful puff pastry turnovers are best served warm, but they are also delicious when served at room tempertaure on the same day of baking.
You can use ready-made Pigs in Blankets, or do as I did, and make your own – that way you get to choose what flavour sausages you want.
I used Lincolnshire Chipolata sausages that were twisted in half in the middle. Cocktail size sausages work well too.
Try to use thin cut streaky bacon, so it becomes crispy. And, if like me, you like your bacon very crispy, you can air fry them for 2 to 3 minutes before adding them to the pastry turnovers.
If you don’t have an air fryer, that is absolutely fine, as you can bake these in a conventional oven with ease.
I’ve shared both baking methods below, so you can choose. I used a very high quality cranberry sauce with whole cranberries in it.
You can of course make your own cranberry sauce and use that. I used grated Parmesan cheese in these, but I have also used grated Cheddar in the past.
Make these now for Christmas, or the New Year, and freeze them before baking. They can then be baked from frozen, just adding 10 minutes onto the total cooking time.
Leftover Pigs in Blankets work well in this recipe too – as long as they aren’t over cooked or too crispy.

- Pre-heat oven to 200C/400F and place all the turnovers in a lined baking sheet. Bake for 20 to 25 minutes.
- To cook from frozen:
- Bake from frozen in a pre-heated oven 190C/375F for 20 to 25 minutes.
- Use grated Cheddar cheese in place of Parmesan cheese.
- Use ready-made Pigs in Blankets.

Ingredients
- 320g sheet of ready-rolled puff pastry
- *4 to 6 chipolata sausages, twisted or cut in half
- *8 to 12 rashers of thin smoked streaky bacon
- OR
- *8 to 12 ready-made Pigs in Blankets
- 8 to 12 teaspoons cranberry sauce
- 1 egg, beaten
- Grated Parmesan cheese
Instructions
1. Cut the pastry into 8 or 12 squares, depending on how big you want the turnmovers to be.
2. Spread the cranberry sauce in the middle of the squares, then sit a pig in blanket on top of the cranberry sauce. If making your own pigs in blankets, wrap the streaky bacon around the sausages,
3. Position the pastry into a diamond shape, and lift one of the middle corners over into the middle of the pig in blanket.
4. Brush some beaten egg over the pastry point and then fold over the corresponding pastry corner on to the one with the beaten egg.
5. Brush all the exposed pastry with the beaten egg, and then sprinkle some grated Parmesan cheese over the turnovers.
6. Heat the air fryer to 200C on the air fryer progamme, and then place the turnovers in a single layer in the air fryer basket or on a wire rack in a drawer style air fryer.
7. Bake for 10 to 12 minutes until the pastry is golden brown and the sausages are cooked right through. You may need to bake them in batches.
8. Serve whilst still warm, or at room temperature. Store any not used in the frudge for up to 2 days.
