A Plethora of Pancake Recipes and Cook for Ukraine
I have never shared any political posts on Lavender & Lovage before – I have just done what I can for former conflicts etc, quietly and privately behind the scenes, so to speak. (I don’t actually see my post today as being political anyway, just humanitarian)
I have watched in utter horror over the last few days, as the illegal invasion by Russia (ordered by Putin and not the Russian people) on a democratic neighbouring country has unfolded.
I had the pleasure of visiting Russia a couple of years ago, and I was blown away by the beauty of the countryside, and found the Russian people to be warm, hospitable and friendly.
As I’ve watched the news over the last few days, I’ve been consumed with anger, sadness, shock, horror and disbelief, as well as the feeling of helplessness. What can I do as one person? What can we all do?
Well, there are numerous charities and websites that have been set up for donations, these are shared on most social media channels, such as Instagram, Twitter and Facebook.
You can attend protests, of which there have been many all over Europe and North America. If you live in the UK, you can write to your MP about the total atrocity of this invasion. I’ve written to my MP already, and I’ve also donated to 2 charities.
As well as these small acts of solidarity with Ukraine and the Ukrainian people, I’m joining in with Olia Hercules and her Russian friend and author, Alissa Timoshkina, to #CookForUkraine – it’s a small gesture of support, but I can’t stand the inertia.
As well as sharing many pancake recipes from the archives on Lavender & Lovahe today, I am also sharing an adapted (GF) version of Olia’s Yogurt Drop Scones – Oladky.
These fabulous little Ukrainian style drop scones/pancakes were served with coffee, wild plum jam, sour cream and blueberries.

OUR MISSION

My Recipe for adapted (GF) version of Olia’s Yogurt Drop Scones – Oladky, from her book, Mamushka
Ukrainian Style Pancakes (Oladky)
My Gluten Free recipe for Ukrainian Pancakes (Oladky) is based on Olia Hercule's recipe for Yogurt Drop Scones, from her book, Mamushka.
These are made with Ready Brek oat cereal, but if you can't source Ready Brek, then just blitz some oats in a food processor to reduce them to a fine flour.
Serve these with sour cream, or yogurt, with jam and fresh berries.
These are very similar to British Drop Scones (Scotch Pancakes)
Ingredients
- 150mls natural Greek style yogurt or kefir
- 1 egg, beaten
- 90g Ready Brek oat cereal
- 1/2 teaspoon baking powder
- Oil or butter, to fry
Instructions
- Mix all of the ingredients together in a mixing bowl, until amalgamated. You should have a soft dropping batter.
- Brush a large frying pan with oil, or butter, and heat over a medium heat.
- Drop the batter in to the pan, about 1 large tablespoon per pancake, and cook for 2 to 3 minutes, before turning over. Bubbles will appear on the top of the batter when they are ready to turn over.
- Continue to cook more pancakes, until the batter has been used up.
- Serve with yogurt, or sour cream, jam and fresh fruit.
Notes
You can serve these as savoury pancakes too - we love them with smoked salmon, sour cream and dill.

Jolly good idea Karen. It’s absolutely terrible and unbelievable too – or maybe not, given who’s in charge in the Kremlin. I visited Moscow many many years ago and absolutely loved it and the people too. I shall see if I can do a Ukrainian post to show some solidarity too – #CookForUkraine
