Beetroot and Walnut Bread Rolls Recipe
Real bread……that most elemental of all foods, the smell is homely, comforting, enticing, warm and yeasty……it’s the staff of life, the essential vehicle for beans, cheese, ham as well as being the ideal accompaniment to soups, stews and casseroles. How is “real bread” defined? The Real Bread Campaign says….”What is Real Bread? Real Bread is nothing fancy and has nothing to hide. And by bread, we mean crusty baps, sourdough, bagels, bialys, injera, khobez, cottage loaves, baguettes, chleb, naan, chapattis, roti, hard dough, stottie cakes, lavash, ruisleipä, ciabatta, bara brith, Staffordshire oatcakes, bannocks, tortillas, paratha, porotta, pitta, pida …the list goes on”….I am quite partial to all of the above as it happens, as well as cobs, farmhouse loaves, split tins, bloomers, muffins etc…..
I LOVE making bread – it’s a cathartic procedure, it soothes my soul and I never see it as a chore. I have many bread recipes on my blog, of which the most popular is my mum’s Scottish Morning Rolls – Baps; they are easy to make and also freeze beautifully, so there is never any need to buy “plastic” sliced bread as you can always have a dozen or more of home-made baps in the freezer – ready for sandwiches, toast or to mop up meaty stew juices or dunk in soups.
Much though I love my mum’s home-made bread rolls, I also love experimenting with bread recipes, and I am rather partial to adding vegetables as well as various nuts. The recipe today is a favourite with all my friends and family; delicious beetroot and walnuts are added to dough with olive oil for a delightful pink coloured bread roll with a nutty texture – perfect for all manner of delightful eating projects, such as sandwiches, stuff on toast, dunking, mopping, with milk etc……this Beetroot and Walnut Bread Rolls recipe is easy to make and is perfect when all that is needed is pink bread!
Make a batch or two of these bread rolls this New Year, their cheery colour will brighten anyone’s post-festive blues, and if you are back at work, they will make an ideal lunch box sandwich base. Optional additions can be considered, such as garlic or even a hint of sage or winter savory – I have also added chopped spring onions to these bread rolls before, it’s up to you, but I do like the simplicity of earthy beetroot with walnuts, served with a chunk of vintage Farmhouse Cheddar cheese and a dollop of pear and apple chutney maybe…..

Beetroot and Walnut Bread Rolls

Ingredients
- 500g strong white bread flour
- 5g dried yeast
- 1 tsp sugar
- 1 tsp salt
- 2 tbsps extra virgin olive oil
- 250ml warm water
- 150g plain cooked (vacuum packed) beetroot, drained and roughly chopped
- 50g walnuts, chopped roughly
Note
Pretty pink bread rolls made with fresh beetroot and walnuts; these make ideal partners to soup, stews, casseroles or for sandwiches. They freeze beautifully and are wonderful when toasted.
Directions
Step 1 | Preheat the oven to 220C/Gas Mark 7 In a food mixer or large bowl tip the flour, make a well in the centre and add the dried yeast, salt, sugar and olive oil. |
Step 2 | Pour in the water and the chopped beetroot and knead with a dough hook for 5 to 7 minutes or by hand for 10 minutes. Put the dough in a large bowl and cover with an oiled plastic bag, or shower cap, and allow to rise for about 1 hour or until it has doubled in size. |
Step 3 | Turn the dough onto a floured work surface and knead lightly for a minute or two. Sprinkle the walnuts over the surface of the dough and then knead the walnuts into the dough. Cut the dough into 12 pieces, and shape them into small, round bread rolls. |
Step 4 | Transfer the bread rolls to a baking sheet, cover them with the oiled bag (or shower cap) and allow them to rise for about 20 to 30 minutes. |
Step 5 | Once the bread rolls have finished their 2nd rise, bake them in a hot oven for about 20 to 25 minutes. The bread rolls are done when they sound slightly hollow when tapped on the base. Serve them whilst still warm with plenty of butter, or set to one side on a rack to cool and eat later. (Suitable for freezing) |

I love beetroot bread. I made a beetroot and spring onion loaf last year, I think it was one of the first fancy loaves I blogged and I really need to make it again. I just love the colour that beetroots give to food.

I am a bit of a carb addict and I can never get enough bread so I’ve been trying to cut down a bit AND start eating proper bread instead of the supermarket stuff that is packed full of preservatives.
I’ve been making really basic recipes by hand but think I may invest in a breadmaker this year. These look fantastic – plus beetroot is so incredibly good for you, you can get a dose of antioxidants as well as eating omething yummy. I’ve baked cakes and brwonies using beetroot before but would never, ever have thought of using it in bread. Thanks!

This hyear I’m moving into baking breads more often. I’m still very much a bread novice but I see a few recipes including vegetables so I’m keen to give it a go. I must admit, the idea of walnuts in the rolls, with a wedge of good cheddar on the side, is fabulous!
