Comforting Soups and Chicken Corn Chowder
How can it be that time again, I mean it seems like only yesterday that I was revealing my secret blog partner’s recipe for last month, The Secret Recipe Club visits Scotland & Seattle with Cullen Skink (Scottish Fish Soup), and here we are again, four weeks later, and how time has flown by…….this month I was delighted to be paired up with Jenni, from The Gingered Whisk, a blog that I know quite well, as from time to time I have perused all of the lovely recipes over there, for North American inspiration. Anyway, she has LOTS and LOTS of lovely recipes, and I had difficulty in choosing just one, but, finally I plumped for SOUP again, but, it is the season for soups and stews, and I really loved the look of Jenni’s Chicken Corn Chowder, so the decision was made and the soup was made one day last week AFTER I had cooked a roast chicken here: Lazy Blue and White Lunch: Garlic Roast Chicken with Root Vegetables Recipe.
I adore creamy chowders, and although I LOVED the ingredients in Jenni’s soup, I prefer mine to be liquidised for a really creamy finish; so, I made exactly to her recipe, but then pulsed it in my new Kenwood Titanium Chef liquidiser for a thick and creamy finish. Chicken Corn Chowder
by Jenni
Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients (12 servings)
1 medium white onion, chopped
3 garlic cloves, minced
3 stalks celery, chopped
2-3 carrots, chopped
2 cans low sodium chicken broth – (I used Essential Cuisine chicken stock)
2-3 potatoes, chopped
2 cans creamed style corn – (I used whole corn on the cob)
1-2 bay leaves
shredded chicken – either three cooked breasts, or 1 rotisserie chicken (I used left over chicken from a roast)
milk
salt and pepper to taste
Instructions
In a large stock pot, saute the onions and celery until tender and the onions are slightly translucent.
Add the chicken broth and the carrots. Cook until carrots are soft.
Add the potatoes and bay leaves and cook until the potatoes are soft (but not mushy!)
Add corn and shredded chicken and let simmer for 10 minutes.
Add milk to desired thickness.
Salt and pepper to taste.
*If you would like the base of the soup to be a little thicker, more gravy like, remove some of the broth from the pot, place it in a cup, and whisk in some flour or cornstarch. Add this back to the pot and let simmer for a few minutes, until it is incorporated and the broth becomes thicker.
The soup was delicious and full of hearty flavours and I served mine with fingers of home-made bread for a comforting lunch the other week. Again, I have had such a great time with my Secret Recipe Club partner, surfing through Jenni’s blog and drooling over all her recipes, it’s such a wonderful club to be part of, and I have discovered so many lovely new blogs and made new friends too. As this is a soup recipe, obviously (!!), I am also entering this recipe into the lovely Linzi’s (over at Lancashire Food) Season of Soups and Stews challenge, such a great idea, and DO add your soups and stews to her linky, plus, I used Essential Cuisine chicken stock in my recipe!

Oh, I’m glad you liked it! 🙂 It is one of my favorite soups! It does look good blended together! I am usually too lazy to make more dirty dishes in the kitchen, so my food is mostly “rustic” LOL.
