The Big Fair Bake and Tropical Wholefoods:
Tropical Fruit Flapjack Slices
for a Tea Time Treat!
It’s been a busy month for me and I am way behind with my Sepia Saturday posts; for those of you who don’t know what they are, it’s my weekly attempt to bake my way through seventy to eighty years of Be-Ro cookbooks…...Sepia Saturday. But, I have managed a sepia bake this week, albeit a combined one for several worthwhile events and challenges, I have made, with much tweaking, a batch of Flapjacks from the 40th edition of the Be-Ro cookbook, which formed part of a pile of tea time cookbooks that I managed to get together (for the September Tea Time Random Recipes event) whilst staying at my daughter’s flat – luckily she is an avid baker and cook, and has lots of books, some of which were “hand-me-downs” from me!
This recipe for Tropical Fruit Flapjack Slices has been adapted slightly, well quite a lot actually, I recently received a box of the most amazing Fairtrade and organic dried fruits and mushrooms from Tropical Wholefruits. I was sent packets of dried mango, pineapple, banana, raisins, apricots as well as spiced apricot kernels, which are delicious. And, amongst my tropical bounty of dried fruits and fruit bars, were packets of mushrooms too, such as porcini, chanterelle and oyster mushrooms – I have enough dried fruit and mushrooms to see me through quite a few meals, but, I wanted to try some of the tropical fruits first, so, I added some dried bananas and pineapple chips to the standard Be-Ro flapjack recipe, as well as increase the flour and add two eggs, so my flapjacks became a flapjack tray bake!
Not only are Tropical Wholefoods dried fruits organic, making this recipe perfect for Organic September, but their ingredients are endorsed by Fairtrade too, so this is a perfect bake for The Big Fair Bake, which is Fairtrade’s baking event running from the 24th September to the 7th October. The Big Fair Bake is the perfect excuse to get inspired, put on your pinny and bake up a treat for others; not just the friends and family, but also in order to aid the farming communities who grew the ingredients. I plan to bake as much as I can, within the restraints of my travel plans over the next week, and this recipe is my first offering, not only for Organic September and Tropical Wholefoods, but also for the The Big Fair Bake, and as my entry into this month’s Tea Time Treats challenge, and Dom’s Random Recipes, which have joined as a shared challenge this month.

Tropical Fruit Flapjack Slices

Ingredients
- 100g (4oz) margarine/butter
- 2 tablespoons golden syrup
- 100g (4oz) sugar (I used Fairtrade sugar)
- 50g (2oz) oats
- 100g (4oz) Be-Ro self raising flour (Use any brand if Be-Ro is not available)
- 75g (3oz) crushed cornflakes
- 2 free-range eggs (beaten)
- 100g dried banana and pineapple pieces (I used Tropical Wholefoods Fairtrade chewy sun-dried bananas and pineapple chips)
Note
A delicious flapjack tray bake, which results in a chewy cake like slice, that is packed full of fruit and oats, as well as cornflakes for an added crunch! This is a cross between a chewy flapjack and cake, it has all the flavours of a traditional flapjack with the added fruit, but is softer and more cake like due to the eggs being added.
Directions
Step 1 | Melt the margerine/butter and syrup together gently (i.e. low heat!) in a saucepan and then set to one side; add the dried bananas and pineapples to soak slightly. |
Step 2 | Mix the dry ingredients together in a bowl, pour in the margarine mixture, mix well, and then add the beaten eggs. |
Step 3 | Spread the flapjack mixture evenly into a suitably sized and greased baking or ceramic tin - use either more margarine or greaseproof paper for this. |
Step 4 | Bake in a moderately heated oven (about 190C/375F/gas mark 5) for 20 to 25 minutes, until the flapjack slice is well risen and golden brown, and is firm to touch. |
Step 5 | Let it set for 5 minutes to cool slightly, then cut into squares or slices whilst still warm. |
Step 6 | NB: This is a cross between a chewy flapjack and cake, it has all the flavours of a traditional flapjack with the added fruit, but is softer and more cake like due to the eggs being added. |

My flapjack is hit and miss – I tend to put apple in mine so it doesn’t turn out rock solid!
Like the idea of the tropical fruit – altho hubby is allergic to pineapple, so I’d substitute that for maybe mango!

I love flap jacks and have been making apple ones (my usual favourite ) almost every week for a few years. I tried these however on Monday and they were delicious. I have never thought of adding cornflakes to the mix and really liked what they brought to it ( by the way I also tried bran flakes and whilst the flap jack was denser, quite liked the nuttier flavour) . It was great tip.

My little boys adore flapjacks, I try to make a batch every week as well as purchasing some as they take big square to school every day in their packed lunches but I’m always trying to think of new combinations to excite them. Will definitely be trying this one.
