Quick Late Summer Bank Holiday Recipe
Hello from North Wales on this sunny late August bank holiday….I’ve been away for over four weeks now, travelling, from Qatar and Russia to Ottawa and the wild national parks of Quebec in Canada, so excuse me being absent for a few weeks here. But today I am sharing a fabulous, quick and easy recipe for Strawberry & Clotted Cream Ice Cream Pavlovas. This quick and easy summer dessert is perfect for any midweek family dessert or for all your summer gatherings, parties, al fresco suppers and lazy garden teas. Made with handy ready-made mini meringues, seasonal fresh strawberries and Kelly’s of Cornwall Clotted Cream Ice Cream. Garnish with fresh mint for the culinary win, I have made this countless times during the summer months.
This recipe was created as part of my recent collaboration with Kelly’s of Cornwall Ice Cream, an ice cream brand I know and love from my teenage years in Cornwall, where I lived in Boscastle. I remember mum buying large tubs of this ice cream, and serving it with her homemade puddings and desserts. She also used to make those amazing little ice cream wafer sandwiches, that used to be so popular, with special packs of long ice cream…….an ice cream wafer sandwich is basically two wafer biscuits with a slab of ice cream in the middle, and was the height of indulgence for us as children, as it was usually what the adults ate when you were enjoying a Mr Whippy ice cream cone, or a “99”.
Using clotted cream ice cream in these summery desserts adds an extra level of indulgence, and Kelly’s Cornish Clotted Cream ice cream is delectably rich and creamy. You could of course add more clotted cream (or whipped cream) but why over-gild the lily, the few ingredients (as listed below) are all that is needed for a smashing summer dessert! So, if you have all of these ingredients to hand, or have time to pop out today to buy some of them (or all of them) why not give this indulgent dessert a whirl……it is so easy and will delight all your summer diners. Cornish Strawberry & Clotted Cream Ice Cream Mini Pavlovas
Serves 4
Ingredients:
4 ready-made mini pavlova meringue nests
4 x 150g scoops of Kelly’s of Cornwall Clotted Cream Ice Cream
1 x 250g punnet fresh strawberries, hulled and halved if large
4 teaspoons caster sugar
Method:
1. Add the sugar to the sliced and halved strawberries and leave to macerate for 30 minutes.
2. Spoon some strawberries into the base of each meringue nest, then add a scoop of Kelly’s of Cornwall Clotted Cream Ice Cream on top.
3. Divide the remaining strawberries between the meringue nests and garnish with fresh mint leaves. Serve immediately. Add a few fresh mint sprigs, to serve.
