I have just got back from Biarritz in SW France and we also popped over the border to Spain and I indulged in a shopping frenzy………..So, before I unpack and post my blog for today – here is a teaser to whet your appetites!
Spanish Cod with Pimenton and Butter Beans
Fresh sustainable cod cooked with butter beans, pimenton (smoked paprika), cherry tomatoes and fresh lemon in a wine and olive oil broth. Served with crusty bread………………..divine!
I opened a tin of butter beans and put them into an oven proof dish; I then placed some cod steaks on top and added a squeeze of lemon juice, a glug of olive oil, half a glass of white wine and then seasoned the dish with pimenton (smoked paprika) and salt and pepper. I popped some cherry tomatoes (on the vine) in and around the fish and beans and baked it at 180C/250F for 30 minutes…….until the beans were hot and the fish was just flaking, but still moist and not too dry. A quick Spanish inspired dish for an easy meal after travelling all day.
