[AD] SPAM® and Eggs Breakfast Sandwich – A tasty three ingredient breakfast sandwich with fried SPAM® and free-range eggs, which is the delicious filling in an oven-bottom muffin bread bun.
SPAM® APPRECIATION WEEK & A GIVEAWAY
There’s a lot of food snobbery about tinned (canned) meat, and people can get quite sniffy about it; but, most tinned meats are usually much higher in meat content than ready meals and fast food, and I think they get a bad rap. SPAM® is one such tinned meat that is often the butt of anti-tinned meat humour, and I am always puzzled as to why this is, when a tin of original SPAM®, as in the chopped Pork and Ham SPAM®, has a whopping 90% of meat in it, and NO, it’s not the ‘scrapings’ or ‘useless bits’ of pork or ham that go into this tinned meat, but is primarily high quality pork shoulder meat and ham. So, when I was approached by SPAM® to create a simple recipe for SPAM® Appreciation Week, I was keen to join in with my SPAM® and Eggs Breakfast Sandwich.

I am a big fan and especially love SPAM® Fritters…..my mum used to cook them for a family tea when I was growing up! POTATO SALAD WITH SPAM®
Today’s Recipe for SPAM® and Eggs Breakfast Sandwich:
Serves 2 people
Prep: 5 minutes
Cook time: 8 minutes
Ingedients:
1 x 200g tub or tin of SPAM®, sliced
2 large free-range eggs
2 Oven-Bottom Muffin Style Bread Buns, cut in half
Method:
- Heat a non-stick frying pan and add the sliced SPAM®. Cook over a medium heat for about 5 minutes, turning them over half way through cooking, until they are golden brown. Set aside to keep warm while you cook the eggs
- Fry the eggs in the same pan, breaking the yolk and turning it over to cook further.
- Arrange the sliced SPAM® and fried eggs on one half of the bread buns, and replace the other half on top to make a sandwich. Serve straight away with brown sauce, tomato sauce and salt and pepper to taste.
