~ A Simple Mussels Dinner ~
Boxing Day, the 26th December, finds me sharing a secret recipe with you all ~ as part of my participation in the Secret Recipe Club. My partner this month was another wonderful blogger in the USA, Nic from I am a Honey Bee blog. I have to admit to making Nic’s wonderful steamed mussels recipe a few days ago, it was our light supper one evening just before the Christmas weekend, a fresh taste of the sea before the indulgences of the Festive period. We get wonderful local mussels here in France, and December is one of the best months to treat yourself to them. I have several mussel recipes already, but could not resist trying a new from Nic’s blog……her recipe is pretty similar to most Moules Marinière recipes, but has the added kick of paprika and suggests toasted baguette with olive oil and garlic butter.
Nic suggests that this meal is accompanied by a large glass of white wine, and we took her advice, it seemed churlish not to take her up on such a great idea! We did toast the bread (baguette) and although I normally enjoy mussels with plain bread, we loved the texture of the toasted bread with the sweet soft mussels and the aromatic juices. This is a perfect seafood supper recipe and one that we thoroughly enjoyed; many thanks Nic for such a simple and yet tasty recipe……just the small addition of paprika made for a twist on the usual steamed mussels (that I serve with herbs), and it worked very well. I did garnish mine with some chopped parsley from the garden, as I still have a large plant thriving due to such a mild winter, and it added a bit of festive green to the dish.

Steamed Mussels
-Serves 4-
Ingredients:
- 3 pounds of mussels, cleaned and rinsed
- 1 cup water
- 1 cup white wine
- 3 cloves of garlic
- 1 small white onion, sliced (optional)
- 2 tablespoons olive oil, plus more for the bread
- 1/2 stick of butter
- 1 loaf of bread
- paprika
- salt and pepper
Steps:
- Starting with the bread, half the loaf lengthwise. Pour olive oil over the bread, sprinkle with paprika. Lightly toast in a 225 oven.
- In a large pot, combine the water, wine, 2 cloves of garlic, onion, olive oil, and salt and pepper. Upon bringing to a light boil, add the mussels to the pot. Cover and cook for 6-8 minutes, or until the mussels have opened.
- While the mussels are cooking, in a separate small saucepan, add the garlic and butter. Melt on low.
- Serve the mussels with the toasted bread, seasoned melted butter, and a cup of the cooking liquid from the mussels. Enjoy with a big glass of white wine.

cooking mussels = intimidating for me… but this recipe is so simple i might just have to make these as part of our new years tapas dinner…
…with the bread, of course. the sauce is always the best part of mussels.
