Freezer Breakfast Sandwiches
with Ham, Eggs and Cheese
Here we are again, another reveal day for the Secret Recipe Club……..and this month I have a fabulous recipe for all those people who say they don’t have time to eat breakfast, Freezer Breakfast Sandwiches with Ham, Eggs and Cheese, easy to make and even easier to heat up. My secret assigned blog and blogger for September was the very lovely Jess from Flying on Jess Fuel and as soon as I saw her recipe for Freezer Breakfast Sandwiches, I knew I had to try them out…….Jess says that the recipe is more an idea than a recipe, but I think that they are a great idea for busy people, and we both loved them when I made them a few weeks ago.
Jess had some other amazing recipes on her blog, and I was very tempted with Tomato, Herb & Goat Cheese Quiche, Antipasto Bake, Bacon Cheddar Cauliflower Chowder, Fried Green Tomatoes with Shrimp and Crawfish Etouffee and Cinnamon Apple Cake. Jess is home cook, foodie and proud Navy wife. She grew up in Boston and now lives on the West Coast. She loves to blog, travel, read and write. When she’s not working or blogging, she can be found running or relaxing with a glass of wine…….her latest recipe is for QUICK PICKLED JALAPENOS {NO COOK}, which I am also tempted to make too.
I made four of these sandwiches, although I will make more next time; they are so easy to prepare and take under two minutes to reheat from frozen. You can adapt the recipe to suit all dietary requirements and tastes, and I fancy making them with fried tomatoes and crispy bacon next time. Jess’s recipe is here: FREEZER BREAKFAST SANDWICHES, but I have posted my slightly adapted recipe below, and my ingredients are shown above – I used Maasdam cheese with Paris ham and my own free-range eggs, and I fried my eggs in a metal ring to get the round shape that you see in the photos.
For those of you who don’t know what the Secret Recipe Club is all about, it’s a way to find and share new blogs. Each month, one member is assigned to another member from their group secretly (hence the name). That person selects a recipe (or more) to make, photograph, and then will draft up a blog post. Everyone in the group posts on the same Monday together and gets to see who had their blog and what recipe(s) they chose. It’s such a fun experience and it’s a great way to get new followers, too. This is my third year, so that’s thirty six new blogs and recipes I have discovered and enjoyed since I joined.

Freezer Breakfast Sandwiches with Ham, Eggs and Cheese

Ingredients
- muffins, split and toasted
- a little oil or butter
- one egg per muffin
- salt and pepper to taste
- one large slice of ham per muffin (or two to three small slices per muffin)
- one slice of cheese per muffin
- kitchen paper and cling film
Note
An easy to prepare "make-ahead freezer breakfast sandwich"; make a batch of these at the beginning of the week and pop one in the microwave before work or school for a tasty and easy breakfast. Omit the ham if you are a vegetarian and substitute with sliced tomato or cooked mushrooms.
Directions
Step 1 | Split the muffins and toast them - set to one side. |
Step 2 | Melt the butter or heat the oil in a frying pan. Break the eggs into a crumpet or metal ring and lightly cook on both sides. Season with salt and pepper. |
Step 3 | Place the cooked, shaped eggs on the bottom of the toasted muffins and then add the sliced ham and finally the cheese. Put the remaining muffin halves on top to make a sandwich. |
Step 4 | Wrap in kitchen paper and cling film, or just in cling film and freeze. |
Step 5 | To reheat, take the sandwiches out of the freezer and remove the cling film. Wrap in kitchen paper if the sandwiches are not already wrapped in paper and microwave for 1 minute on half power, then turn the sandwich over and heat for 30 seconds on full power. |
Step 6 | Unwrap the sandwich and enjoy! |

Amazing, I would never think of doing that, afraid the bread would get all mushy in the microwave… this is really pretty nice, I like whole wheat muffins, I bet they can stand the microwave without problems too

The trick is to wrap the sandwiches in the kitchen towel – that stops them from becoming soggy and wholemeal muffins would also be great Sally!

I just had this for lunch and it was very, very good. I will be making a batch to freeze later this afternoon with a little thicker ham and Swiss cheese and I scrambled my egg with salt and black pepper in a ramkin and zapped it in the microwave for 10-15 seconds at a time until I got it mostly done. I am making some with whole wheat muffins and some with sourdough muffins. Sooo good! I think I’ll try adding a scrape of butter or mustard to one side of the muffin when I will reheat. Or maybe some of my homemade apple mango chutney just to shake things up a little. π
