I am a member of The Secret Recipe Club, a wonderful global way to meet new friends as well as discover new blogs; this is my second entry into the event and what fun I had choosing a recipe from my secret partner’s blog:

I wouldn’t call myself a chef. I’m no Julia Child, Bobby Flay, or Alton Brown. But I do love to spend time in the kitchen. If I’m not there, you might find me sitting in front of the TV, watching the Food Network with a cookbook on my lap, copying tasty recipes that I find. Then I’ll make and post the recipes I find here. It’s an endless cycle that I enjoy–and I hope you can benefit from it too.
Devilled eggs, a perfect recipe for me as I have three chickens who are still laying an egg a day and I have about 2 dozen eggs to use at present…….and, I happen to love stuffed eggs too, and especially if they are piquant and spicy. I made these for apéritif snacks for the First Sunday in Advent and they went down a storm with my friends who dropped by for a drink on their way home. I spent an hour perusing through Megan’s recipes and then all of a sudden I saw her Classic Deviled Eggs recipe, which, is perfect for me and my expanding egg cartons! I went overboard and also made edible arrangements for the devilled eggs, the decorative idea coming from an old friend, Mary Pat.
We ate these Devilled eggs with chilled Chablis and the men also had a Pastis too…….the only change I made was to use English Mustard in place of the “yellow prepared mustard” which I took to be American mustard. The recipe that Megan shares on her blog originates from The Comfort Table by Katie Lee. I used smoked paprika, which is my favourite type of paprika, I love its subtle smokiness which is intriguing; next time I may add a smidgen of curry powder too, but that is personal taste.
I made a dozen as the recipe suggests and arranged them on two plates with the decorative cucumber and tomato flowers. These would make a wonderful addition to the Festive Buffet Table and they really are very easy to whip up. Classic Deviled Eggs
(Makes 24)
Ingredients:
- 1 dozen large eggs
- 2 tbsp white vinegar (optional)
- 1 cup mayonnaise
- 1 tbsp yellow prepared mustard (I used Colmans English Mustard)
- 1/4 tsp salt
- 1/4 tsp pepper
- paprika for garnish (I added smoked paprika to the mixture and used parsley as a garnish)
Directions:
1. Place the eggs in a large saucepan and cover completely with water. Add the vinegar (this is optional, since I made a test batch with–and the ones for the party without–there was absolutely no difference in the end result). Bring to a boil over high heat. Once the water comes to a boil, turn off the heat and cover the saucepan. Let sit for 15 minutes.
2. Remove the eggs from the pan with a slotted spoon and place in a colander. Rinse under cold water until the eggs are cool enough to touch. Remove the shells.
3. Slice each egg in half lengthwise. Remove the yolks from the whites and place in a separate bowl and mash with a fork until there are no large chunks left. Mix in the mayo, mustard, salt and pepper. Scoop the yolk mixture into a plastic bag. Cut off one corner of the plastic bag and pipe the yolks into the egg whites. Sprinkle with a dash of paprika.
4. Cool the eggs completely before serving.

Goodness, it's years since I heard of devilled eggs! They do look good though and I can imagine that the smoked paprika would really add to the piquancy. You decoration is v. posh, a few red and green pickled onions and you could call yourself 'Fanny Craddock' lol! I don't know how you find the time for all that fiddly stuff, but I'm glad you do.

Thanks Janice! I find decorating stuff in the kitchen very relaxing and if I have some time, it calms me down a bit! LOL! Devilled eggs really are a blast from the past and as for Fanny Craddock, LOL, I'll need to boss Malcolm around more whilst he slurps gin and tonics!

I've always wanted to make these having seen them in a recipe book years ago but never got round to it. Love your garnishes. My mum's a whizz with these and she used to give demonstrations on carving vegetables. I'm so glad I joined the secret recipe club. It is so much fun!
