Scottish Smoked Salmon, Home-Made Pizza

The Secret Recipe Club
The Double Dipped Life
At the risk of sounding boring, and I know I say this every month, but here we are again, another BIG SECRET RECIPE CLUB reveal day…..and another lovely blog and blogger discovered! And, again, at the risk of being repetitive, I can’t believe how quickly the month has flown by since my last Secret Recipe Club reveal……which was a LOVELY Chocolate dessert, Chocolate Fondue and Fresh Fruit Dippers. Last month was a bit of a disappointment for me, not due to my lovely secret blog, which was Kristin at Lovin’ Life , but because I was an “orphan” – the person who was given my blog, never bothered to visit me or make one of my recipes…..one of the LOVELY SRC members DID step in, but my recipe was never featured on the Group D linky, which was a shame…..however, I was not put off and here I am again, and I’m just as excited to see who “had me” later on today…..which, is all part of the fun!
But back to this month, a new start and a NEW blog – my secret partner this month is Krista from The Double Dipped Life! Krista lives in Utah with her husband and three children and her passion is to make her home and family a place to be enjoyed and celebrated, which seems like a wonderful way to celebrate life to me! Krista has some lovely recipes, and before I decided to make her Pizza Dough, I was tempted by her Thick Beef Curry in Sweet Peanut Sauce, Monte Cristo Breakfast Sandwich, Crispy Baked Breakfast Taquitos with Lime-Chipotle Dip and her Ritz Cracker Chicken. Krista also has a very useful page of meal plans, a bit like my Monday Meal Plan, but set out as menus on a page….Weekly Menu Plans
I decided on Krista’s PIzza Dough as I LOVE yeast baking, and although I DO have a fail safe pizza dough recipe myself, I LOVE trying new recipes and methods…..Krista’s recipe comes from another blog called OurBestBites and although it was in US cups, I was able to make it, as I DO have a set of US cups, as sent to me by a lovely friend across the pond! Having made the pizza dough, the rest was down to me, and I decided on a rather lovely Scottish seafood topping of smoked salmon, prawns, chopped tomatoes, Scottish Isle of Mull Cheddar, Mozzarella and fresh Dill weed.…with a little garlic too! I served my seafood pizza for a light lunch with home-made coleslaw and assorted pickles…….
This pizza crust was lovely – easy to make and light with a chewy texture too, which I like, almost like a pizza sour dough……I cooked my pizza on a pizza stone and added a cup of boiling water to the oven as it baked…..something I always do when I bake bread. It really was a wonderful robust style of dough and I managed to make two smallish size pizzas, one for now and one for later! I didn’t add tomato sauce to the the pizza, as a base topping, but brushed the dough with olive oil before adding the rest of the topping ingredients. Krista says…..” Homemade pizza is just amazing. It’s so much better than delivery, plus you can put your own toppings on it……..I’ve tried lots of different dough recipes, but this one has become my favorite. It’s from one of my favorite food blogs: OurBestBites.com. This recipe can also be used to make breadsticks!”…….I agree 100% Krista and we ALL loved this pizza dough.
Here’s the recipe here, but, you can ALSO access the recipe on Krista’s blog here: Pizza Dough as well as the original recipe on Our Best Bites here: Breadsticks and Pizza Dough
Pizza Dough Recipe:
1 1/2 c. warm water
1 TB sugar
1 TB yeast
1/2 teas salt
3-4 1/2 cups flour
In a large bowl, combine water, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly. Add salt and stir. Add 1 1/2 c. flour and mix well. Gradually add more flour (usually between 3-4 cups, depending on your elevation and your humidity) until dough starts to pull away from the sides of the bowl and it barely sticks to your finger.
Spray a glass or metal bowl with cooking spray and place dough in the bowl.
Cover and allow to rise for 45 minutes or until doubled in bulk. Preheat your oven (and your pizza stone, if you want) to 425 degrees. While oven is heating, punch down dough and shape into a disc. Spray your work surface, rolling pin, and pizza stone with non-stick cooking spray. Place dough disc onto work surface. Roll and shape into a circle. Very gently transfer the dough onto your pizza stone and continue to shape up to the edges of the stone.
Using a fork, prick several holes in the crust. Drizzle crust with a little olive oil and brush all the way up to the edges. Sprinkle with garlic salt or homemade Garlic Seasoning.
Both oiling and garlic salting the crust help crisp it up, give it a great flavor, and keep it from getting soggy in the middle.
Then, have you ever made pizza and had it be doughy in the middle? Duh- bake it first! Bake crust in preheated oven for 10-12 minutes or until golden. Remove from oven.
Spread your sauce on the cooked crust, and then add your toppings.
Return crust to oven and bake 10-12 more minutes or until cheese is melty and the crust is golden brown.
I’m now looking forward to my AUGUST SRC partner and challenge, I hope you like my pizza topping idea and if you manage to visit Krista over at The Double Dipped Life, tell her I sent you over, she may offer you a slice of cake as she has some amazing dessert and baking recipes too! See you later, Karen

Wow just wow. Your pizza looks so tempting I wish I could reach into my screen and eat it!! I’ve always wanted to make my own pizza and recently bought a pizza stone but haven’t gotten round to it yet. I’ll have to look for your fail safe recipe. My friend is allergic to tomatoes so it would be great to make my own as I can put what I want in it! Lovely SRC recipe and I hope you’re not an orphan this month!
Karen says
Thanks Ros! And NO, I am NOT an orphan this month! YAY! My lovely partner made one of my pizzas, how funny is that! Karen

Oh Karen, you’ve just given me a moment a of bitersweet joy. As a teenager my family and I went on holiday to various campsites around France. Invariably there was a wood fired pizza vendor on the site and we’d always have one as a treat one evening. I would always always always choose the seafood pizza. Your post brought back the most vivid memories of tripping down to the pizza place, using my best GCSE french to order the pizza fruit de mer et frites, and then sitting outside a Keycamp caravan with my Mum, Dad and sister noshing away, with the smell of a citronella candle nearby to discourage to mozzies that had a habit of eating my mum.
Amusingly, I refused to eat Moules in their pure form until later in my teen-years and then was hugely annoyed with myself for not realising how delicious they were and missing out on them for so long.
So, essay over, and thankyou (though I am desperate to go to France now)
Karen says
Thanks Gill! LOVED your nostalgic comments (essay), and yes, there are STILL wood fired pizza places here en France and one of the most popular pizzas is the fruits des mer too…..the smoky flavour that a wood fired pizza oven imparts to the pizza crust is DIVINE! And yes, I ALSO still burn citronella candles outside to banish those darn mozzies….Come and see me any time I am here – it would be fun! Karen
