I love a good pickle, and Branston Pickle has always featured on our family table here at Chez Lavender and Lovage. Indeed, my dad’s favourite sandwich was a cheese and pickle sandwich made with Branston Original Pickle. However, I also often use Branston in my recipes, and not just as a condiment. I always add a dollop of Branston Pickle to my curries, stews and it’s particularly nice when added to Shepherd’s or Cottage Pies. But, today I would like to share a new recipe that uses Branston Smooth Pickle – a fabulous family recipe for Savoury Baked Apples, which can be served with a Sunday Roast, or as a main mid-week meal as we like them, served with mashed potatoes and gravy.
Today’s recipe for Savoury Baked Apples is also very easy to prepare and cook, and the added addition of the Branston Smooth Pickle to the sausage meat stuffing adds a wonderful piquancy and sweetness. The recipe only has five ingredients in it, most of them being popular store cupboard ingredients. I think these baked savoury apples would be great for a Halloween or Bonfire Night supper, with friends and family. They can be prepared ahead of time, right up to the baking stage, and then only need to be taken out of the fridge for 30 minutes before cooking, which will really help with time management if you are busy.
Although you cannot beat a cheese and pickle sandwich (of course with Branston Pickle), I hope that today’s recipe will show you just how versatile it is when used IN recipes for cooking and baking. The smooth pickle has the consistency of a pouring sauce, so it mixes and blends well when added to other ingredients. It also marries well with the richness of the sausage meat and the tartness of the cooking apples. I used Bramley apples in this recipe, and you do need to use a tart apple that becomes fluffy when baked.
This lovely autumnal recipe is shared below, in a handy printable format, and if you are vegetarian, you can omit the sausage meat and use Quorn mince instead, NOT forgetting the vital secret seasoning ingredient of Branston Smooth Pickle of course! Ingredients
- 6 cooking apples (such as Bramley apples)
- 6 x high meat content pork sausages (skinned) (about 450g)
- 2 heaped tablespoons Branston Smooth Pickle
- 1 tablespoon chopped fresh parsley leaves
- 1/2 red onion (peeled and finely diced)
- Salt and pepper to taste
- Butter

Directions
Step 1 | Core the apples with an apple corer and make a hole big enough for the filling, I like to make a hole of at least 3cm to 4cm. |
Step 2 | Mix the sausage meat, Branston Smooth Pickle, red onion and the chopped parsley together to make a stuffing - season to taste with salt and pepper. |
Step 3 | Fill each hole with the sausage stuffing mixture, dot each apple with a little butter and then place the apples into a buttered oven dish or a roasting tray. |
Step 4 | Add a little water to the dish to stop the juices burning and caramelising, and bake in a pre-heated oven 190C/375F/Gas 5 for 45 to 60 minutes. (Cooking time depends on the size of the apples) |
Step 5 | Baste the apples regularly with the juices in the dish and add a little water if they dry out, or baste with the meat juices. Once they are cooked, gently take them out of the pan using a slotted spoon, loosely cover them with foil and set aside for 5 minutes before serving. |
Step 6 | These savoury baked apples make a fabulous family supper dish when served with mashed potatoes and gravy, along with some extra Branston Smooth Pickle on the side. |
Step 7 | NB: If there is any excess stuffing mixture left, then roll them into balls and bake for 30 minutes alongside the stuffed apples. |
