Quince Blossom and a Lazy Saturday Salad Recipe:
Strawberry and Mint Fruit Salad
Today has been a lazy day for me, for a change! My daughter has gone back home and I have just pottered all day – in the garden as well as in the kitchen. It’s all about strawberries today, and I have made a batch of Strawberry Curd, a batch of Strawberry and Vanilla Jam as well as this Strawberry and Mint Fruit Salad…….for the second time this week. The sky is full of the most amazing “story book” fluffy clouds this hot Saturday, and for one idle hour I “made” pictures from them as I lay on an old sun lounger. The birds are busy building nests and Willow, my Burmese cat, is also sunbathing on the terrace, whilst the chickens are enjoying “dust baths” at the bottom of the garden. It’s one of those perfect spring days where you can almost see summer meandering over the hill and our trusty barbecue has been dusted off and is ready for al fresco dining later on tonight. In light of all of this summery weather, I was delighted to buy a large tray of local strawberries last week………red ripe and bursting with that enticing strawberry smell, we have eaten them “naked”, (the strawberries that is, not us!) with breakfast yoghurt, in some little cakes, Strawberry Fair Yoghurt Cupcakes, as well as in fruit salads. I have made curd and jam, as I mentioned before and I also plan to make some creamy desserts with the few that are left……it has been a veritable strawberry fest and I’m looking forward to the soft fruit season with anticipation.
Not only are the birds and chickens enjoying this amazing weather, but all of my fruit trees have burst into life and they are all laden with blossom. To the side of the garden, nestling against an old stone wall, is my beloved quince tree……bedecked in a haze of pale pink blossom it looks like a “tree bride” waiting to walk down the aisle! The smell is intoxicating and if the amount of blossom is to be believed, I am in for a bumper crop this year. My wild cherry tree is also covered in billowing white blossom, whilst my old fig tree is looking resplendent in pale green……..maybe all of this wet weather has been just what the gardening doctor ordered for my garden. The lilac tree is in full bloom and I picked a huge bunch to adorn my house, as well as some flowering rosemary too…….it’s all burgeoning and bursting with beautiful blossom!
Today’s supper will be taken outside, under the quince tree and Malcolm is setting the table and chairs as I type. It’s going to be a simple grilled lemon and rosemary chicken dish, barbecued and served with fresh peas and new potatoes……..and a goodly helping of Strawberry and Mint Fruit Salad, with a jug of Pimms too. Strawberry and Mint Fruit Salad

Ingredients
- 1 x punnet of strawberries, hulled and cut in half (350g to 400g)
- 2 oranges, segments cut in half (peeled, membrane and pith removed)
- 2 apples (peeled, cored and cut into small chunks)
- 6 kiwi fruit (peeled and cut into small chunks)
- juice of one lemon
- 2 teaspoons caster sugar
- natural fruit squash made with 300mls water (such as strawberry, orange, apple etc)
- small bunch of mint (leaves finely chopped and some left whole for garnish)
Note
A deliciously fresh fruit salad with mint, this is easily made and it perfect for a summer dessert, as well as for any dinner parties or large gatherings. In place of the water, use sparkling wine for special occasions. Serve with crème fraîche, cream or ice cream
Directions
Step 1 | Mix the fruit squash, sugar and lemon juice together and stir until the sugar dissolves. If the squash is sweet enough already, omit the sugar. |
Step 2 | Arrange the prepared fruit in an attractive glass serving bowl in layers, with the chopped mint leaves in between each layer. |
Step 3 | Pour over the lemon and fruit squash mixture, gently mix the fruit through the juice and then arrange some mint leaves on top of the salad as a garnish. |
Step 4 | Keep covered in the fridge for up to 2 days. Not suitable for freezing. |

Last year was a bumper year for wild blackberries, I still have a couple of bags that I picked on dog walks in the freezer. Oh dear my grammar, I didn’t have dog walks in the freezer, I have bags of blackberries (which I picked last year on dog walks) in the freezer. Lovely warmed up over ice cream, or in home made yoghurt.
