Pudding Basins in Summer?
A Twist on Two Classics:
Berry Bread & Butter Summer Pudding
If you think pudding basins are strictly for the winter, think again! I use my pudding basins throughout the year as mixing bowls, storage bowls, salad bowls for picnics, ice cream containers and of course, for puddings! So, when I was asked by Just Pudding Basins if I would like some assorted pudding basins sent to me, to use and review, I was thrilled……as a pudding basin is a thing of beauty to me. I was even more excited and impressed to learn that ALL of Just Pudding Basin’s basins are made in the UK……how refreshing to know that a classic British cooking bowl that serves up so many of our much-loved and traditional dishes, are actually made in the UK and not China. And, you can order any pudding basin in any size from their lovely website…..from mini dinner party pudding basins to LARGE family friendly basins, they are all there. I was lucky enough to be sent samples from the whole range, including sizes that I have found VERY hard to find in the past, namely 3 pint (1.7 litre) and 4 pint (2.27 litre) basins.
I plan to make many puddings in the bowls that Just Pudding Basins kindly sent me, and I will be sharing all the recipes here on my blog – but what to make for my first creation? It’s summer, well, it’s supposed to be summer, but, even though we are experiencing inclement weather, we have to EMBRACE the abundance of summer produce such as beautiful British berries……which, I am lucky enough to have growing in my garden. I have raspberries, blackcurrants and redcurrants, and the strawberries are coming on nicely too….and so it was that I had a flash of inspiration one morning, whilst buttering a brioche bun and then spreading strawberry jam on to it, a delicious pudding idea swept over me……a steamed style pudding, but made in the microwave, along the lines of a bread and butter pudding but with overtures of a classic summer pudding brimming with berries…..
A light, fluffy concoction bursting with berries is what I was after…….and I was rewarded with just that with this recipe; the brioche “jam sandwiches” that made up the bulk of this pudding, slid out of the pudding basin with ease and was so light, whilst the berries made a delicious sauce. The pudding also looked a treat, as well as tasting divine; it was comforting enough for a cold and wet summer’s day, but light enough to be enjoyed after a lunch of bread, cheese and salad. Although I served this “au natural” when I took the photos, I imagine that this will be delicious when served with cream, ice cream or custard of course.
Just a note, if you order over £25 worth of basins from Just Pudding Basins right now, you will get a LOVELY little Puddington Bear and a 2 pint pudding basin free…….I was sent one too, and he is JUST so squidgy and pudding-ish!
But back to my recipe…..the pudding basin I used for this pudding was a generous 3 pint basin, and like all the basins, it came with a lid……the basin felt strong and did not warp after being microwaved for just short of 20 minutes and the lid fitted nice and snug…..My basin washed up well and looked as new afterwards. I stored my cooked pudding in the basin after serving and as there was just the two of us, I popped it into the freezer. I was VERY impressed with the quality of the basins that I was sent, and I am set up for quite a while now with every size imaginable!

Berry Bread & Butter Summer Pudding

Ingredients
- 6 to 8 brioche buns (cut in half)
- softened butter
- strawberry or raspberry jam (or berry jam of your choice)
- 150g mixed summer berries (I used blueberries, raspberries, strawberries and blackcurrants)
- 300ml whole milk
- 4 eggs, free-range or organic (beaten)
- 4 to 6 tablespoons sugar
- 1 teaspoon vanilla extract
- caster sugar for sprinkling between layers
Note
A steamed style pudding made in the microwave for summer; a twist on a classic bread and butter pudding and a summer pudding.....light and fluffy and bursting with summer berries. I made this with brioche buns, but any egg enriched bread would be great......or even croissants.
Directions
Step 1 | Grease a 3 pint (1.7 litre) pudding basin generously with butter. |
Step 2 | Butter the brioche buns on both halves and the spoon some jam on to them, to make a jam sandwich. Cut three of them into three long strips per bun and place the sandwich strips around the outside of the pudding basin, to form a "brioche" crust. You should use three of the brioche sandwiches this way leaving three more for the rest of the pudding. |
Step 3 | Place one whole sandwich at the bottom of the pudding basin and then start to layer the inside of the pudding with mixed berries and then the brioche sandwiches (cut in half), ending in a brioche sandwich. You should end about three quarters of the way up the pudding basin to allow for the pudding to expand. |
Step 4 | Whisk the milk, eggs, sugar and vanilla extract together and pour the custard mixture over the bread and butter pudding and berries; allow to soak for up to 3 to 4 hours. |
Step 5 | When you are ready to cook the pudding, place the lid on top of the pudding basin, and put in the microwave; cook on 50% for 10 minutes then take the pudding basin out and take the lid off before putting back into the microwave and cook for a further 6 to 8 minutes, or until the pudding is puffed up and light and fluffy. |
Step 6 | Allow to cool slightly and then gently invert the pudding onto a serving plate. Cut into wedges and serve with cream, ice cream or custard. |

I love bread and butter pudding and this twist sounds even better!! Would you believe I don’t actually own a pudding basin? I am definitely buying some now, not just because I want the bear too – so cute! The first recipe I would try would be this one unless of course you post something that is more attractive to me in the meantime 🙂

Hee hee, love little Puddington Bear. I’m so jealous of your big collection of pudding basins, all those different sizes would be so useful.
When I went to university (a long time ago) my Mum sent me off with a 2 pint pudding basin to be used for all kinds of mixing and storing. I still have it now and use it regularly and it’s probably the only thing I have left from the ‘cooking kit’ she created for me.

Beautiful looking summer pudding – the brioche must really ramp up the luxurious feel! Do you think this would be ok to steam cook it rather than microwave?
