I have always been fascinated with Indian style street food, and today’s recipe for One Pan Omelette Toastie is based on an Indian Street Food favourite, Omelette Bread (Bread Omelette)
Usually made with a spicy egg mixture, lots of butter, white sandwich bread and cheese slices, I’ve made mine healthier by using spray oil and wholemeal bread.
My recipe for One Pan Omelette Toastie has many variations – from the original sandwich above, to cheese & ham and cheese & tomato that I’ve showcased today.
But, there’s so many more variations to consider, some ideas which I’ve shared below. And, the beauty of this recipe is that it only uses ONE frying pan/skillet.
That’s just one pan with cooking an omelette filling too, the procedure is simple and very clever, plus it saves on washing up!
I have used crust free wholemeal bread and fat reduced cheese in today’s recipe – but only because I am following a diet (Slimming World) right now.
However, any berad can be used, and all types of cheese that melt well would be great too.
I’m thinking of a Raclette Cheese and Ham version or a Blue Cheese and Fig in Sourdough bread version.
Ot how about a Full English Breakfast version using leftover cooked sausages and pre-cooked bacon?
Anyway, whatever you filling simple of fancy, this is such a brilliant toasted sandwich hack, and I have made several over the last few days, for breakfast and supper.

One Pan Omelette Toastie

But, there's so many more variations to consider, some ideas which I've shared below. And, the beauty of this recipe is that it only uses ONE frying pan/skillet.
Ingredients
- 2 large eggs, beaten
- Salt and black pepper
- 1 tablespoon water
- 2 slices bread, I used crustless wholemeal
- 2 thin slices smoked deli ham
- 2 slices extra mature Cheddar cheese
- Fry light spray oil, or butter
Instructions
- Beat the eggs with the salt, pepper and water.
- Pre-heat a large/wide frying pan over a medium heat, and spray with oil or brush with butter.
- Pour the omelette mixture into the pan, swirling it around so it covers the base of the pan.
- Dip the bread into the egg mixture than then turn the slices over, to the egg dipped side is facing up, and sit them next to each other on top of the egg mixture.
- Turn the heat down and cook for 3 to 4 minutes, until the omelette is set. Using two spatulas, gently turn the omelette over, so the bread is underneath. NB: You may need to spray the pan with more oil as you do this. Ease the egg mixture up and add the oil or butter.
- Place the ham and cheese on top of the omelette, ham on one side and the cheese on the other side.
- Gently fold the omelette up over the sides of the ham, cheese and bread. You may need to do all four sides, or just two sides depending on the size of the omelette.
- Continue cooking until the bread is lightly toasted and golden brown, then fold one half over the other half of the sandwich, making sure the cheese side is still in contact with the pan.
- Cook for a further 1 to 2 minutes until the cheese has melted. Using as spatula lift the toastie out of the pan onto a plate, and serve cut in half.

oops i think my comment disappeared. Just saying that toasted sandwiches are all the rage and we have a new sandwich shop just opened near us. so trendy 🙂 Korean toasties are so popular these days, and i am amazed that they sprinkle heaps of white sugar over them. who knew that omelettes and sugar were so popular in asian countries?

I’m not familiar with the Indian street food that inspired this dish, but it does sound very nice indeed. Reminiscent of but a bit more elaborate than a popular old time dish here in the US called ‘grilled cheese sandwich’,
