For Christmas Canapés and Buffets
Following on from my last Peppadew Pepper recipe for Festive Roast Pumpkin and Peppadew Pepper Lasagne, today’s recipe for Mini Bruschetta with Peppadew Pepper Spread is another fabulous idea using Peppadew peppers that is perfect for Christmas and the New Year, as well as any celebratory gathering or party. I always have a few jars of assorted Peppadew peppers in the pantry, and they make a great addition to any buffet table or as party nibbles, as well as being a colourful and tasty ingredient in numerous recipes.
As well as being a wonderful spread idea for bruschetta, as today’s recipe suggests, the spread also makes a tasty dip for crudités, crisps and crackers. I’ve also added a dollop of this tangy mixture to boiled pasta and soups, so you can see that is a very versatile recipe. If you have “olive haters” in the crowd, then just omit the olives and add grated cheese or chopped cherry tomatoes for an extra taste dimension. This also makes a cracking salad dressing when added to a little oil and vinegar which is then whisked together to make a creamy dressing or sauce.
As I have been commissioned by Peppadew Peppers to create six special recipes for the run up to Christmas, do keep popping back to see the next few recipes in my Christmas Recipe File. Here’s what’s to come, and what has already been published:
