Making an Easy Enchilada Sauce in under a Minute!

Today’s recipe is for Easy Enchilada Sauce – and I’m chuffed to dried chillies with the recipe, as it delivers everything I am looking for in a spicy sauce – it’s easy, quick, tasty and fulfils my desire for Mexican fare! I know that you can buy enchilada sauce in the UK (and France), but it’s never the same as the sauces I used to enjoy when I lived in the States. If you search for enchilada sauce recipes on-line, you will be met with a barrage of recipes from very simple chilli and tomato sauces to the authentic “salsa rojo”.……it’s a bit of a minefield and I was loath to use my precious dried chillies (sent to me from a chum in New Mexico) in a recipe I might not like. What I was after was a complex sauce somewhere between the two, and one that had a bit of a kick.
Enter another friend in the States; in a food swap a few years ago she sent me a selection of dried chillies, all used now, but also some recipe cards for Mexican recipes using dried chillies. Amongst the recipes was one for Enchilada Sauce, and it seemed to tick all the boxes for what I was looking for in a sauce. The recipe uses flour in it, as well as oil and vinegar, and I think it’s these three ingredients that improves the sauce in my opinion. For those after a Gluten Free recipe, you can omit the wheat flour and add a gluten-free alternative. The sauce is vegetarian (and vegan), and has some lovely elements to it, such as the addition of several dried chilli peppers mixed with other herbs and spices. I was also lucky enough to have some dried Mexican oregano in my arsenal of herbs, which really makes a difference.

A fabulous recipe for home-made enchilada sauce, which can be whipped up in under a minute in a Froothie blender (or any other blender, liquidiser or food processor). The recipe was adapted from an American friend's recipe, and the addition of the flour helps stabilise the sauce and allows it to thicken when cooked. Directions
Step 1
Place all the ingredients into the Froothie blender, in the order listed and blend on slow for 30 seconds.
Step 2
Then increase speed to medium and blend for a further 20 to 30 seconds, until the sauce is smooth and the dried chillies have been amalgamated with the rest of the ingredients.
Step 3
Pour the sauce into clean jam jars or container that have covers, and store in the fridge for up to a week.
Step 4
If you don't have a Froothie Blender, then blitz the ingredients in a liquidiser or in a food processor until everything is blended into a smooth sauce.
Step 5
Use in any enchilada or Mexican recipes. Please note this is a cooking sauce; if you want to use it raw, then omit the flour.

Well I think that’s the easiest enchilada sauce recipe I’ve ever seen. Looks pretty stellar, and I really like the idea of using it with cauliflower – going to try that!

Your sauce looks delicious , I love sauces that have a”kick ” to them. Just a question since you only blended it for a minute in total, did you find that the raw flour taste had gone?? I too have a froothie and was wondering if the flour would need more cooking to get rid of that raw taste if you see what I mean?? I am going to book mark and try.

Hi Nayna, the sauce is a cooking sauce, so it gets cooked with your recipes, you don’t use it “raw”, and if you wanted to use it raw, then you just omit the flour. I hope this helps – you can use cornflour too. I used it in 2 recipes – baked enchiladas and a whole roast cauliflower – see above!

Brilliant idea to use your Froothie for making sauces Karen, especially using dried chillies which aren’t the easiest of things to break down. It’s all so very exciting. Love the sound of your enchilada sauce and what a good idea to have a cooking sauce at the ready.

Thanks Choclette! You are right, the dried chillies are easily powdered in this beast of a machine and I love the fast that I can make my own sauce, so there’s no added “nasties” or extra sugar, as lots of commercial sauces have in them.
