La Chandeleur – French Pancake Day
Today, the 2nd February, is La Chandeleur, which is French Pancake Day. Also known as Candlemas Day, it’s a lovely feast to celebrate, as well as practicing making pancakes for Shrove Tuesday on the 16th February which is more commonly known as Pancake Day here in the UK. So, I am sharing a delightful recipe for Lemon Curd & Raspberry Crêpes today, to get you in the mood.
Today’s recipe for Lemon Curd & Raspberry Crêpes, is a recipe from Bonne Maman, using their tangy lemon curd. Lusciously sweet and tangy, it’s heavenly when served on toast, crumpets, in baking, or when served on freshly made pancakes. I love Bonne Maman’s lemon curd, as it’s so unctuous and lemony, and not too sweet, but it has a divine buttery texture and taste too.
There is a wonderful affinity between sharp lemons and fresh raspberries, which works so well in this recipe for Lemon Curd & Raspberry Crêpes. The original recipe on the Bonne Maman site, suggests adding creme fraiche or ice cream, with toasted almonds, but as we ate these for breakfast, we had them with just the lemon curd, fresh raspberries, and some lemon thyme as a garnish.
They made for a delectable weekend breakfast dish, and everyone loved the Bonne Maman lemon curd. I have shared the recipe for these pancakes below, along with some more pancake recipe ideas, and I am sure you will enjoy them as much as we did, if you make them. PLEASE do let me know if you make them, Karen

Your crepes look so deliciously delicate Karen. I have a heavy hand and mine always come out a bit too thick. Adore lemon curd on pancakes. I think it’s probably my favourite topping.
