I am delighted with this new recipe of mine for Air Fryer Coronation Chicken Scotch Eggs. Basically, I used chicken sausages, with curry seasoning and a little bit of mango chutney.

They turned out a treat, beautifully cooked, and with no excess oil or fat; and, there wasn’t the usual mess of cooking them hot fat etc to contend with either.
