Fresh Blueberry Scones Recipe
Firstly, apologies to my regular readers for the lapse in recent posts – I have been away on holiday for a week, staying at a little cottage in Suffolk where the internet was very erratic before it faded away completely. I confronted this dilemma with fear and frustration and then subsequently bliss, as my days became ordered by holiday activities and not social media and banging away on the laptop keyboard. However, it is nice be back on-line again, and it’s brilliant to be here writing and sharing my latest recipe and news. The week before our holiday in Suffolk, I was in North Yorkshire staying with my parents where mum and I did a bit of baking together, as you may remember from her pie recipe here: An Old Fashioned Kinda Pie! Heirloom Apple or Fruit Tart Recipe. One of the earliest memories I have when I was growing up, was baking with mum (and my grandmother’s) in a warm and cosy kitchen, and my mum’s pastry, pies and scones are still the best ever.
Our stay in Suffolk was amazing and we did lots of very “British Holiday” stuff, such as visit the seaside at Southwold Pier, play miniature (pitch and putt) golf, play the old-fashioned slot machines, have cake, eat fish and chips, walk, go to the cinema, eat out by the Deben river (at the local pub), watch cricket and enjoy time with family and good friends……it was just the break that I needed, and that coupled with my stay at my mum and dad’s made the whole few weeks away thoroughly enjoyable, although it’s a shame that a 2″ yacht screw/bolt (that had embedded itself in one of our tyres whilst out the day before) rather spoiled the last day and thank goodness for the RAC who came out and fixed the problem for us, so we were able to leave and catch our ferry. Still, it’s the happy memories that I will take away with me, now I am safely home that is.
But back to my baking with mum recipe – today’s recipe is for her Fresh Blueberry Scones, which my dad loves, as do I. It’s a basic scone recipe that has a little added baking powder for an extra lift and the essential ingredient is the fresh blueberries of course, which need to be fresh (or frozen) and not dried. These scones are delightfully rich with the added “squish factor” as the fresh blueberries almost explode in your mouth when you “hit” one as you bite in to them. Mum made these one baking day, along with her apple and blackberry pie, and I made a rather nice mixed cheese and pepper tart, which I will share soon, as well as some jam tarts.

Ingredients
- 225g self-raising flour
- 1 teaspoon baking powder
- pinch of salt
- 50g butter
- 25g caster sugar
- 75g fresh blueberries
- 1 egg beaten with 150mls (1/4 pint) milk or buttermilk (keep a little back to glaze the tops of the scones)
Note
These delightful fresh blueberry scones are perfect with a cuppa for afternoon tea or for a lunch box treat! The recipe is based on my mum's recipe and you really need to source fresh blueberries for the best taste and texture - fresh raspberries would also be great! Serve warm with a smear of butter and maybe a dollop of jam and/or cream for extra indulgence.
Directions
Step 1 | Preheat oven to 230C/450F/Gas mark 8. Sift together the flour, salt and baking powder into a bowl and add the sugar and butter. Rub in the butter until the mixture resembles fine breadcrumbs. |
Step 2 | Add the fresh blueberries and then gradually mix in the egg and milk mixture to make a dough, saving any excess to glaze the tops of the scones. |
Step 3 | Roll out the dough to about 1/2″ thick, then cut out 2″ rounds with a plain or fluted cutter, kneading and re-rolling the dough until it is all used up. |
Step 4 | Arrange scones on baking sheets then brush tops with the milk and egg mixture. Bake for 8 for 10 to 15 minutes, until well risen and lightly golden. Cool on a wire rack. |
