Today’s recipe for Healthy Hidden Veg Meatloaf is recipe that I adapted from Slimming World.
It’s packed with vibrant veggies and lean cuts of meat. And, for those following the Slimming World diet, it is Syn free too.
I did tweak the original recipe a bit, adding veggies that we all love, and also changing the meat ratio slightly, based on what I had in the pantry and fridge.
But it still remains Syn free for SW followers, and it is absolutely delectable, both when served warm and cold.
I served this with salad for our first meal, it DOES serve 6 people, and garnished it with cornichons (gherkins) as well as adding a goodly amount of mustard.
The next day we enjoyed it with air fryer chips and salad, and then for our third sitting, I made meatloaf sandwiches with pickles.
I’ve added a few substitutions you can make to the recipe below, such as making it a chicken or turkey meatloaf, OR using low-fat sausages – you will have to adjust the calories and Syns if you use sausages.
If you are a bit meatloaf-ed out after day 2 of serving it, it will be fine in the fridge for up to 4 days, or you can freeze it in slices too.

Substitutions for Healthy Hidden Veg Meatloaf
- In place of the minced beef, use 5% fat minced pork.
- Use minced chicken and chicken breast in place of the minced beef and pork steaks.
- Use minced chicken and chicken breast in place of the minced beef and pork steaks.
- Sausages can be used in place of minced beef, and chopped lean ham in place of the pork steaks.
- Carrots make a good veggie to add, dice finely and cook with onions in step 1.

Healthy Hidden Veg Meatloaf

Ingredients
- Low calorie cooking spray
- 1 onion, peeled and finely chopped
- 6 spring onions, trimmed and diced
- 4 garlic cloves, peeled and finely diced
- 2 red peppers, trimmed and finely diced
- 100g bacon medallions, finely chopped
- 500g lean beef mince (5% fat or less)
- 400g lean pork steaks, all visible fat removed, roughly chopped
- 1 level teaspoon Dijon mustard
- 6 large gherkins, roughly chopped
- 1 egg, beaten
- 2 tsp chopped fresh thyme
- 4 tbsp chopped fresh parsley
- Pinch of grated nutmeg, or ground mace
- Salt and freshly ground black pepper
Instructions
- Preheat the oven to 180C/160C Fan/350F/Gas mark 4. Spray a large frying pan with low calorie cooking spray and place over a medium heat. Cook the onion, spring onions, garlic, and peppers for 8-10 minutes, stirring often, until they are soft. Transfer the vegetables to a mixing bowl and set aside. Discard any juices that may run out of the cooked veggies.
- Sauté the bacon in the same pan over a medium heat for around 5 minutes or until crispy, then add it to the onion and pepper mixture.
- Add the beef, pork, mustard, gherkins, egg, herbs and nutmeg or mace. Season with salt and pepper, then mix well.
- Spoon the meatloaf mixture in a 900g/2lb non-stick loaf tin and bake for 1 hour, or until firm.
- Remove from the oven and drain away any juices from the tin. Leave the meatloaf in the tin for 30 minutes, and then turn out onto a board and cut into thick slices.
Notes

i do love a meatloaf made with turkey – so lean and moist. meatloaf is a great way to hide veggies (if you need to) or add them in 🙂 Grate em and chuck em in. so tasty.
