It’s Friday and that means Fish on Friday, and today my post is an easy, in fact just made and devoured, breakfast wrap; made with some “Square” wraps that were sent to me as part of a small selection of Warburtons product samples. I was sent a selection of bread samples from the famous British bakery a few weeks ago now, which included hot dog buns, sliced bread, sandwich thins and some square wraps! I DO like Warburtons, and, if you are going to eat commercial bread, I think their bread is one of the best on the market. They DO have a large selection of bread and bread products and I was MOST impressed with their new “White Square Wraps”, which forms the basis of today’s recipe, Scandinavian Smoked Salmon & Scrambled Egg Breakfast Wraps.
The wraps were tasty and easy to roll, and not soft and “pappy” like lots of commercially baked wraps; in fact the fluffy scrambled eggs and smoked salmon didn’t dampen the wrap at all, so this breakfast was a lovely combination of flavours and textures too. I must also share the fact that I DID freeze mine, and they defrosted in about 30 minutes and again, were NOT damp or soggy, in fact, they were just as froze them a few weeks ago. This is helped by the fact that the packaging they are sold in, has a “zip-lock” style fastening at the top, so the wraps stay super fresh and don’t dry out.
This recipe is one I whipped up this morning, for my Fish on Friday post, and the smoked salmon I used was some GORGEOUS Scottish Loch Fyne smoked salmon I received some months ago; again, I ate one packet and froze the rest! There was some cream cheese with chives in the fridge as well as some free-range eggs, and so an elegant breakfast was thrown together, and I SHALL be making these wraps again, as they were just delicious! I can also see these being perfect for a starter – using one full wrap per two people and cutting them into smaller pieces, and then serving them with a small green salad, and maybe some cornichons and/or caper berries too.
With thanks to Warburtons for sending me selection of their bread products – the other product that I loved that they sent me was a packet of sandwich thins, a sort of soft Scandinavian style sandwich bread for open sandwiches, and again, with a lovely baked finish. Have a GREAT Fishy Friday, and I hope this little breakfast recipes inspires you to try it out, maybe for a special treat for Sunday breakfast or brunch! See you later with more 5:2 recipes, more reviews and some new Giveaways, Karen.

Ingredients
- 1 Warburtons Square White Wrap (or wrap of your choice)
- 2 large thin slices smoked salmon
- a knob of butter
- 2 free-range eggs
- 2 teaspoons cream cheese with chives
- black pepper
Note
An easy and yet impressive Scandinavian style breakfast wrap, with cream cheese and chive scrambled eggs and smoked salmon; this would also make a wonderful brunch, lunch or snack, and can also be eaten cold as part of a packed lunch.
Directions
Step 1 | Beat the eggs and season them with black pepper, and then add the cream cheese and whisk together. |
Step 2 | Heat a sauce pan and add the butter, when it has melted, add the eggs and scramble to taste, but stirring the eggs all the time until cooked. |
Step 3 | Meanwhile, heat the wrap for 30 seconds in a microwave, or by placing in a warm oven for a few minutes - warming the wrap makes it easier to roll and fold! |
Step 4 | When the wrap is warm, lay the salmon slices over the wrap, right up to the edges and then place the scrambled eggs down the middle, before gently rolling up tightly......then cut the wrap in half at an angel and serve with cherry tomatoes and a cress garnish. |

I like to bake bread and pizza, but it’s nice to buy commercial bread too and I agree Warburtons brand is quite good. Salmon and cream cheese is one of my favourite filling!

I adore smoked salmon, so anything that features it is fine by me. I think this would be great for getting teens to eat breakfast even without the smoked salmon.

I agree Janice, and it is so easy to make too! I, like you, ADORE smoked salmon and this salmon from Loch Fyne was SUPERB!

I like the Warburton’s square wraps too. And this filling looks like a power brekkie for folk on the go, or lazy so and so’s – like me.
