Fish on Friday with Posh Salmon Fish Fingers & Chips
What a week it has been, I have had a sick chicken to deal with, Deirdre one of my Coronation chickens is not well; and despite all sorts of molly coddling and special remedies I am still worried about her. The weather has been minus zero most mornings and yet it has soared up to a balmy fifteen degrees during the day, so wood burning fires that were lit early morning became totally tropical by Midday and clothing has been abandoned, adorning armchairs and tables – NOT right down to our undergarments of course ……we do observe a certain amount of decorum in our household. Pancake day arrived and pancakes were flipped and devoured with gusto; I was particularly pleased with my Luxury Seafood Pancakes au Gratin and my Quire of Paper Pancakes served with the traditional lemon and sugar were delicious too……..whilst my Banoffee Banana and Buttermilk Pancakes made a wonderful pudding one evening. Yes, we embraced pancakes with fervour this year, and I am quite sad that the excuse for eating them daily has passed…..
We all love fish and seafood, and Friday is the traditional day in our family to treat ourselves to something fishy and lovely. Salmon is a favourite with all of us. I DO love it simply pan-fried or roasted with Asian spices and honey……it also makes a great luxury addition to fish pies, pancakes and stir-fries too; but now and then the urge to have fish fingers takes over and so I decided to make posh fish fingers with my fresh salmon this week, and furthermore, I served them with home-made chips, especially as it IS National Chip week and is allowed, great excuse eh! These salmon fish fingers are easy to make and make a lovely change from the usual commercial kind made with cod, hake, haddock or whiting. As well as the naughty chips, all that was needed to complete this meal was some fresh lettuce leaves, fresh lemon and a dollop of home-made mayonnaise.

Ingredients
- 450 - 500g Salmon fillets (skinless)
- 1 Large Egg (lightly beaten)
- 75g Breadcrumbs (fresh ones are best or panko crumbs)
- Rapeseed oil (for shallow frying)
- Fresh lemons (cut into quarters)
- salt and black pepper (to taste)
Note
Making your own fish fingers is easier than you think, and salmon fish fingers are a wonderful alternative to the usual white fish ones, plus, they are quite posh!
Directions
Step 1 | Cut the salmon fillets into twelve equal-sized fingers. Beat the egg and put it in to a bowl; place the breadcrumbs into another bowl and season each with salt and pepper. |
Step 2 | Dip each salmon finger in the beaten egg and then in the breadcrumbs, to evenly coat. |
Step 3 | To shallow-fry, heat the oil in a large frying pan on a medium–high heat and fry the fish fingers for 3–4 minutes each side or until crisp, golden and cooked through. Drain well on kitchen paper. |
Step 4 | Serve the salmon fish fingers with lemon wedges as well as chips, salad and tartar sauce. |

Yummy! We had fish very Friday too. I’ve tried the Label Rouge Scottish farmed salmon, & it’s really good! Since then I only buy this farmed salmon. I’m trying this recipe for dinner tonight. My sons will be delighted because they love fried fish with lots of mayonnaise!

I grew up in a family that always ate fish on Fridays and continue that practice even though it isn’t required by the church any longer. Salmon is abundant where I live and I serve it often but never the way you have prepared it. Today is Friday and I might just have to make it this evening. Love the panko crust.

You’ve just reminded me I’ve got an enormous Alaskan salmon in the freezer. I can’t believe I forgot about it! I’ve never had it fried, but my paternal grandfather is a huge fan. I think I would like it, too!

When fried in panko or breadcrumbs Lauren, it keeps the salmon moist and it’s not greasy either!
