Creamy Salmon and Orange Pasta with Mixed Herbs Recipe
Christmas arrived early the other day, a fabulous box of fresh fish arrived, as you may remember from last week’s Fish on Friday post – Easy Peasy Fish on Friday Recipe: Family Friendly Fabulous Fish Pie, and along with my fish box was a special gift from John at Delish Fish for me to try, and then to review, a Honey Roast Salmon Side – beautifully presented in a vacuum packed tartan (plaid) sleeve. The salmon side was dressed with slices of oranges and lemons and was ready to eat, either hot or cold. Delish Fish Honey Roast Salmon Sides are made using the same secret recipe and method as their smaller fillets, which I have enjoyed in the past, and are very versatile. Plus, they are vacuum packed and flash frozen for convenience, so, I cut my side in half and froze one half before enjoying the other half in sandwiches, with salads and in this pasta dish – Creamy Salmon and Orange Pasta with Mixed Herbs.
The salmon was DIVINE! Soft and meltingly tender, with no bones, with a subtle smoked flavour that comes from hot smoking and the honey roast method. As you can see from the photos, the colour was a beautiful deep pink (salmon pink?!) and the skin peeled away from the side with the greatest of ease. I could have put this salmon side on a platter with a few sprigs of parsley and served it straight from the packet – the lemon and orange slices that garnished the side of salmon was a nice touch, and the packaging was attractive and very Scottish! A side of salmon as good as this would make an EXCELLENT gift for a foodie friend or as part of a family hamper – I thought the price was VERY reasonable, each side (between 1 and 1.2 kilos) is £25, that’s not much for a top quality Scottish salmon, dressed and ready to eat.
Having enjoyed the salmon in sandwiches and salads, as I mentioned before, I decided to create a family friendly pasta dish with the salmon that was left. Pasta is always a great hit with working families, and this recipe for Creamy Salmon and Orange Pasta with Mixed Herbs is on the table in UNDER half an hour – be prepared to be VERY worried Jamie Oliver! The secret ingredient in this pasta dish is the orange – the idea came to me when I saw that John had decorated the salmon side with oranges, as well as lemons; and, I have often thought that oranges have a much better affinity with rich, earthy salmon than lemons. To make this an easy supper dish recipe, I also dispensed with the white sauce, and added a dollop of crème fraîche to the pasta before adding the rest of the ingredients.
The result was a creamy pasta with top quality salmon, zesty orange, fresh herbs and salty parmesan cheese, all bound in a simple creamy sauce with lots of freshly milled black pepper, wonderful! This recipe would feed a family of four, as in two adults and two children, but may only stretch to three adults – however, it is an easy recipe and the quantities can be increased for a larger gathering, as well as being decreased too. I used fresh chives and parsley, although I know that dill is the “usual suspect” when used with salmon, but with the warmth of the orange zest in this dish I wanted clean, fresh and simple herbs, and dill has a very distinctive flavour that might have marred the zestiness of the orange. Ingredients
- 350g penne pasta
- zest from 1 orange
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh chives
- 50g parmesan cheese (grated)
- freshly ground black pepper
- 2 x hot smoked salmon fillets, about 350g in total weight (boned and skinned, I used Delish Fish honey roast salmon)
- 4 tablespoons crème fraîche
Note
A quick and yet impressive pasta dish suitable for all the family as well as being a lovely dinner party dish, and is on the table in half an hour. The orange zest marries well with the richness of the hot smoked salmon and parmesan cheese, whilst the crème fraîche makes an easy white creamy sauce. Use a good quality hot smoked salmon.
Directions
Step 1 | Cook the pasta according to pack instructions. |
Step 2 | Meanwhile, prepare and assemble all your ingredients, flaking the salmon and placing them all in a dish ready for adding to the hot pasta. (Not including the crème fraîche) |
Step 3 | Drain the pasta once it is cooked and add the creme fraiche, mix well before adding the rest of the ingredients and gently mix through. |
Step 4 | Serve immediately with extra grated parmesan cheese and crusty brown bread. |

A lovely recipe Karen, I have a beautiful side of wild salmon (my husband’s 89 year old uncle catches two a year & has them smoked for family) we’re eating it as is, simply with soda bread, herbs and lemon. I will order a side from John and try your recipe later in the month it’s mouth watering.

What an original idea Karen. Very inspired. And I wholly approve of the ‘anti-sauce’ sauce: I’m a great believer in using creme fraiche as a sub for creamy sauces in most instances, as it is so easy to jazz up, and the half-fat is usually as good as full fat. As for the salmon as gift idea, it certainly is. I would be over the moon if someone ordered one for me! And £25 is a fantastic price too. Lovely recipe

Thanks Kellie, this salmon would feed at least 20 people as part of a buffet, and would make at least 5 meals for an average family, making it a cool £5 per meal – for the quality of this Scottish salmon, it is very well priced and not a bone in sight! Karen

I would use orange as it is the perfect partner to salmon in my opinion. I used to make an orange sauce with cornflour for salmon which I’d completely forgotten about so thanks for jogging my culinary memory!
