A family favourite, this Easy Sausage Plait is not only great picnic food but makes a tasty family supper dish, as well as being perfect for high tea, festive buffets, parties and for lunch box snacks.
There is something very indulgent about a Sausage Plait – it is decadent and definitely “more is more” being a rather large sausage roll!
And, the good news is, is that is super easy to make, using just 2 main ingredients, the sausages and the puff pastry. The other ingredients are also easily sourced and are ones you probably have to hand.
I used Lincolnshire sausages in this recipe, as we love the fact that main herb used in these regional bangers, is sage.
Today’s recipe for Easy Sausage Plait is an updated version of a recipe I posted several years ago.
I’ve tweaked it a bit and have added substitutions and some other helpful notes, such as vegetarian version.
I see this recipe being a fabulous idea to serve this Halloween or Bonfire Night. Just cut into smaller slices and serve with “blood” aka Tomato Ketchup!
Alternatively, why not make this delectable pastry for a Thanksgiving Buffet, not forgetting it would be very welcome on the Christmas and New Year’s Buffet table too.
Substitutions and Cooking Notes
- For a veggie version, use Quorn sausage patties, crumbled and mixed with the rest of the filling ingredients.
- Use ready-made sausage meat.
- Substitute the bread crumbs and sage for a ready-made stuffing mixture, such as Paxo sage and onion stuffing mix. Make up with boiling water before adding to the sausage meat.
- Use homemade flaky pastry in place of ready-made puff pastry.
- Can be frozen at the pre-baked stage or after being cooked.

Recipe for Easy Sausage Plait
Easy Sausage Plait
A family favourite, this Easy Sausage Plait is not only great picnic food but makes a tasty family supper dish, as well as being perfect for high tea, festive buffets, parties and for lunch box snacks.
Use high quality (high meat content) sausages, and if fresh sage is not available, use 1 teaspoon of dried sage in its place. Can be frozen at the pre-baked stage or after being cooked.
I used Lincolnshire sausages with minimum 75% meat content.
Ingredients
- 1 teaspoon vegetable oil
- 1 medium onion , peeled and diced
- 50g fresh white breadcrumbs
- 10 fresh sage leaves, finely chopped, OR 1 teaspoon dried sage
- Salt and pepper, to taste
- 450g high meat-content sausages , skinned
- 250g butter puff pastry
- 1 egg, beaten with a little milk
- Mixed seeds, such as sesame, nigella, poppy seeds etc
Instructions
1. Fry the diced onion in the oil until softened. Tip into a bowl, add the bread crumbs and fresh sage, mix well, season and cool.
2. Heat the oven to 180C/350F/Gas 6. Mix the sausage meat with the sage and onion breadcrumb mix.
3. Roll out the pastry to a 35 x 30cm rectangle and put on a baking tray lined with baking parchment.
4. Form the meat mixture into a long sausage shape and put in the centre of the pastry, leaving 2cm at each end.
5. Cut 1.5cm strips away from the sausage meat along the length of the pastry. Fold in the ends and then alternate strips of the pastry up and over the sausage meat, crossing over each other neatly.
6. Trim the excess pastry and glaze with the beaten egg, and then scatter mixed seeds over the top.
7. Bake for 35 minutes until crisp and golden.
8. Serve warm or cold, cut into slices with salad, pickles, chutney, mustard or as a family meal with seasonal vegetables and potatoes.

Use any favourite sausages. Cumberland sausages, Pork and Leek sausages and Pork and Caramelised Onion sausages also work very well.

I’ve never thought of using Lincolnshire sausages for a plait.
We always use Cumberland with caramelised onions through the middle (homemade or jar depending on how I feel)
