This is my slightly adapted recipe for Hot Chocolate Fudge Sundae as taken from her book, Summer Collection, which still remains one of my very favourite cookbooks.

Such is power and popularity, that in the wake of her Summer Collection book release, supermarkets and deli’s all over the land sold out of sun-dried tomatoes and “muffin” tins! I have ALL of her cookbooks and they are the most thumbed books in my vast cookbook collection.

Hot Chocolate Fudge Ice Cream Sundae

The beauty about the basic ice cream is that if you don’t have an ice cream maker, then you can make this by hand as it is a “no churn” style, and uses a very simple cream and condensed milk base, which means no egg custard to worry about.

The sauce for this sundae is also super easy to make and although Delia suggests using dark chocolate, I quite fancied a milk chocolate fudge sauce for my ice cream delight, so that’s exactly what I used, but the choice is yours of course.

DO give the recipe I have shared below a go, it’s decadently sweet and fudgy with a nutty crunch and it’s very easy to make.

A rather naughty ice cream sundae where vanilla ice cream is served with a hot chocolate fudge sauce, chopped mixed nuts and whipped cream. This recipe was taken and adapted slightly from Delia Smith's cookbook, Summer Collection.

Ingredients

Ice cream

  • 570 ml (1pint) condensed milk
  • 275 ml (10 fluid oz) single cream
  • 275 ml (10 fluid oz) creme fraiche
  • 2 teaspoons vanilla paste

Fudge sauce

  • 1 x 170 ml tin evaporated milk
  • 225 g milk chocolate, broken onto small pieces

Topping and garnish

  • chopped mixed nuts to garnish (about 50g (2 ozs))
  • whipped cream

Note

A rather naughty ice cream sundae where vanilla ice cream is served with a hot chocolate fudge sauce, chopped mixed nuts and whipped cream. This recipe was taken and adapted slightly from Delia Smith's cookbook, Summer Collection.

Directions

Step 1 To make the ice cream, place all the ingredients into an ice cream maker and turn it on to churn for about 30 to 45 minutes. Spoon the ice cream into a freezer proof container and freeze until needed. Just before serving, take the ice cream out for a couple of minutes to soften slightly. (I made my ice cream in an ice cream maker, and not manually as Delia Smith suggests in her book)
Step 2 To make the fudge sauce, pour the evaporated milk into a bowl that sits over a saucepan of boiling water and add the broken up chocolate pieces. Heat them together until the chocolate melts, and then continue to stir until you have a thick fudge sauce.
Step 3 To serve the sundaes, scoop some ice cream into a serving bowl and then add some fudge sauce and chopped nuts, repeat again (3 scoops of ice cream per person) and then end with some whipped cream and more sauce and chopped nuts.

        Thanks Karen – I’m sure you’re right! However I wouldn’t be buying creme fraiche so fingers crossed it won’t make a difference to substitute it…

        All ice cream is delicious (apart from rum n raisin – although I bet I get shot down in flames by someone about that!)

            Hi Karen, just wanted to give you an update – I tried the recipe over the weekend! It came out lovely and I did use mascarpone – I suspect you’re right in that it made little difference in taste to use it. It was a bit grainy but that’s most certainly down to me having to do it the old fashioned way with a plastic tub in the bottom of my freezer and agitating it with a fork every half an hour! It was yummy anyway but my kids broke extra meringues in to it for ‘double yum’! thanks again!

    For me, it’s got to be mint choc chip – it’s just so fresh and it makes me very nostalgic for summer holidays as a child when we would go to the ice cream farm near my grandparents house and I would spend what felt like hours surveying all the flavours, only to pick mint choc chip every time!

    Mmmm.. hard choice to pick a favourite flavour of ice cream, as both lavender and amaretto are both right up there. A really good vanilla ice cream always goes down well too. 🙂

    Oh dear I missed Dom’s RR this month – things are out of control. I need this ice cream maker as mine went walkabout years ago ( but that’s another story) now I am left to making non- churn ice cream . chocolate fudge – what could be better.

    I love good old vanilla, but it has to be a premium one, not a cheap variety, or clotted cream ice cream, as they are a perfect base for any dessert. I usually pour some homemade jam over it

    Wow I love ice cream!! shame about the nuts though as im serevely allergic… but it doesnt matter as I just wouldnt use nuts 😀

    Rum and raisin – so funny, when I was a little girl, I remember thinking when my mum ate rum raisin that it was such a ‘yukky’ flavour and i’ll never eat that when i could have chocolate, or strawberry – and now… I love it! Must be age 🙂 Thanks for lovely recipe too x

    I love vanilla dairy ice-cream best as you can do anything with it and it goes with everything! The kids like to use different sauces and we get various sprinkles, berries and squirty cream to put on top!

    A really good Vanilla ice cream is hard to beat, can add strawberries and crushed meringue, or crushed chocolate flake, nuts etc
