Greek Salad and Chicken in Pita Bread
Pinch, punch first of the month and no returns……………haha, got you! Yes, it is the first of August already, I have lost track of time this summer and already I can smell wood-smoke hanging in the air in the cool of the evening. The sun is still shining here in SW France though, and summery meals are still very much on the daily food planning agenda…….but, I am busy with B and B guests right now, so trying to be imaginative with two slices of bread on a daily basis is getting tricky! However, some slices of cold chicken come charging to the rescue, along with some pita breads I find tucked away at the back of the bread bin ~ we shall have a summery meal today, it will be a sandwich as I am mega busy, but it will be of grand proportions! I feel all Greek Islands today, so Greek will be the theme!
We will lunch on the sun dappled terrace with an illicit glass of wine maybe (Illicit? Well, it is midday and the start of the week and we are supposed to be working!) and dream of hot sand, tavernas, smashing plates and ouzo! This is an original recipe that I concocted today and I have to say it was sublime…..…lovely moist slices of chicken with a small Greek salad topped with a creamy oregano dressing and all piled in a fluffy toasted pita bread ~ it doesn’t get much better than that on the flavour and taste front!
We dined and chatted in eager anticipation of tomorrow, and the big monthly Fair in nearby Saintes ~ we have just completed building a chicken run and chicken house, and we are off to BUY our chickens at the fair tomorrow! I am so excited, we will start off with 2 or 3 hens for now, that should give us about 1 and a half dozen eggs a week…………I am already thinking of fluffy sponge cakes, light cheese omelettes and poached eggs on toast……I cannot wait! I’ve even got their names picked out, but more about that when they are finally home with us tomorrow…….. Anyway, here is my wee recipe for Greek Salad and Chicken in Pita Bread, for a cold meat sandwich on Monday, because cold meat is not just for Sunday Tea-Time!
Greek Salad and Chicken in Pita Bread Recipe
Pita bread, toasted
left-over cooked chicken slices, about 4 slices
4 slices cucumber, peeled if you wish
1/2 tomato, sliced
Rocket leaves, Arugula leaves
1/4 white onion, sliced
2 to 3 slices feta cheese
4 green or black olives, halved
Dressing:
2 tablespoons Greek yoghurt
2 teaspoons olive oil
1 teaspoon white wine vinegar
1 teaspoon Parmesan cheese, grated
squeeze of lemon juice
1/2 teaspoon dried oregano or 1 teaspoon fresh oregano
1/4 teaspoon dried dill/dill weed or 1/2 teaspoon fresh dill
1/4 teaspoon garlic granules, NOT salt
1/4 teaspoon white sugar (optional)
salt and pepper to taste
Whisk all dressing ingredients together and taste, adjust seasoning.
Heat pita bread in toaster and carefully cut in half but leave both halves attached.
Build the sandwich! Rocket/Arugula leaves, then cucumber, tomato, olives, sliced onion, feta cheese, chicken slices, more rocket/Arugula leaves and dressing!
Garnish with fresh oregano and away you go!
See you all tomorrow with tall tales of hens, names and stuff like that………………….
