A Leftovers Legend!
Today’s recipe for Bubble and Squeak with Peppadew Peppers is a Leftovers Legend! Bubble and Squeak is a British institution and is never more popular than on Boxing Day and after any other big celebratory meals, as well as Sunday lunch. Basically, for those of you who don’t know, it’s a pan-fried hash of sorts, usually vegetarian, made with potatoes, cabbage, sprouts, carrots and any other leftover vegetables. Most nations have a similar recipe for using leftover veggies, but I always think that the British version has a rather quirky and endearing name!
Today’s version is part of my Peppadew Peppers recipe folder of piquant recipes, and is exactly the same as a traditional Bubble and Squeak, but with the added ingredients of Peppadew Peppers. Mashed Potatoes, Carrots and Cabbage were pan-fried with chopped Peppadew peppers to create a fabulous brunch-cum-light-lunch meal, and all that was needed to accompany this colourful “twice laid” plate of deliciousness was some crusty bread. Obviously, crispy bacon, fried eggs and even a grilled sausage or two would have been just the job for this easy to cook and frugal dish, especially for a late weekend brunch or breakfast.

Ingredients
- 50g salted butter
- Leftover mashed potatoes (about 450g)
- Leftover cooked cabbage of sprouts (about 225g)
- Leftover cooked carrots (about 150g)
- 4 x Peppadew™ Roasted Red Peppers (cut into small pieces)
- salt and pepper to taste
- freshly chopped parsley
Note
A festive twist on the usual bubble and squeak, add some diced Peppadew™ Roasted Red Peppers to leftover vegetables for a quick and easy breakfast, brunch or vegetable accompaniment idea.
Directions
Step 1 | Melt the butter in a large frying pan or skillet and add the leftover vegetables and chopped peppadew peppers - fry them over a medium heat until a crust forms underneath, then turn it over or mix it up with a wooden spatula and continue frying until it is hot and golden brown. Season to taste with salt and pepper. |
Step 2 | Scatter the fresh chopped parsley over the top and serve straight from the pan with fried eggs for breakfast and/or brunch, or as part of a cooked main meal. |
