Bombay Toast (Indian Masala French Toast) is a fabulous savoury French Toast recipe, with its roots in Mumbai (Bombay) street food.
Made with slices of fluffy white bread, which is soaked in a spicy, savoury egg and milk mixture, it makes a wonderful breakfast, brunch or supper dish.
I served mine for a lazy weekend brunch with some Geeta’a Sweet & Spicy Mango Sauce, for their range of DIP, DRIZZLE, MARINADE OR STIR FRY sauces, which exactly what they say on the tin (bottle!)
I’ve made my recipe for Bombay Toast (Indian Masala French Toast) fairly simple, based on what I had in the pantry, and the fact that I was serving them with a dipping sauce. However, I had made a list of optional “extra” ingredients you can add you the recipe, if you want to spice it up.
The only proviso is that you try to use free-range eggs, and large slices of fluffy white sliced bread. Sourdough bread doesn’t give the same texture or lightness, and, the Bombay street food version uses local sliced white bread, namely Amul Sandwich Bread and Kwality Sandwich Special Bread.
Serve a fried egg on top of this Bombay Toast (Indian Masala French Toast) for an extra indulgent meal. Or, with salad and fried Bombay style potatoes for a more satisfying supper dish.
For those readers living in the UK, I used Jackson’s of Yorkshire White Champion Bloomer in this recipe, as it’s my favourite commercially made bread. I am a big fan of Jackson’s Bakery, which uses NO palm oil in their bread, and their bread actually tastes of bread, as it used to in the old days!

Optional Extra Ingredients
- 1/2 finely chopped onion – add to the egg mixture
- 1/4 teaspoon turmeric
- 1/4 teaspoon ground coriander or cumin
- 1/4 teaspoon ground Garam Masala
- 1 clove garlic, finely diced
- Serve with a fried egg
- Serve with fried potatoes and/or salad

Ingredients
- 2 large slices white bread, soft
- 2 free-range eggs, beaten
- 100mls milk (semi-skimmed or full fat is best)
- 1/4 teaspoon chilli flakes, or 1 fresh red chilli, deseeded and finely diced
- 1 tablespoon finely chopped fresh coriander, plus extra for serving
- Pinch of salt
- Salted butter, for frying
- To serve:
- 2 tablespoons Geeta'a Sweet & Spicy Mango Sauce
Instructions
- Whisk the eggs and milk together, and then add the chilli flakes, chopped coriander and salt. Mix well and pour it into a large shallow dish or bowl.
- Add the sliced bread in an even layer, and allow the mixture to soak in for a minute, before turning the slices of bread dover, and soaking for a further minute.
- Melt the butter in a large frying pan, over a medium heat, until it is foaming, and then add the eggy bread; fry the bread over a medium heat for 1 to 2 minutes until golden brown, then turn them over and continue to fry for a further 2 to 3 minutes until golden brown and the egg mixture has set.
- Serve the freshly fried Bombay Toast (Indian Masala French Toast) cut into squares or triangles with extra fresh coriander scattered over, and a bowl of Geeta'a Sweet & Spicy Mango Sauce for dipping and drizzling.

this sounds very tasty. i grew up with savoury french toast, and didn’t realise that most people ate it as a sweet dish till i was an adult. maybe my mum was ahead of her time?:-)
