Baileys Double Chocolate Mousse
with
Toasted Hazelnuts and Baileys Cream
Enter the dessert of your dreams……..Baileys Double Chocolate Mousse with Toasted Hazelnuts and Baileys Cream, a decadent delight that is made with TWO sorts of Baileys Irish Cream, aka Liquid crack! It’s a classic chocolate mousse, notched up with the addition of Baileys Chocolat Luxe and Baileys Original Irish Cream…..a sinful sweet that is perfect for any dessert with the girls, or for ladies who lunch.
Baileys Chocolat Luxe is a fusion of luxurious Belgian chocolate, Irish whiskey and cream has resulted in a rich drinking experience that brings together two adored favourites into a decadent treat. This is a pure, unadulterated molten chocolate pleasure, and I can inhale it at ten yards (or should that be metres now!) It adds a deliciousness richness to a plain chocolate mousse, as well as a boozy kick.
Topping off this fluffy bed of deliciousness is a cloud of softly whipped cream with a splash (I lie – there’s a generous slug) of Baileys Original Irish Cream; and if that wasn’t enough, I have then scattered some dark chocolate and toasted hazelnuts over the top, to complete this dreamy dessert picture. The recipe may look (and is) top drawer, but it is easy to make and can be made before the grand dessert event.
But, don’t take my word for it, the recipe is shared below for all of your chocolate eating pleasure, and if you make it, DO let me know what you thought of it. Perfect for any dinner party dessert, or for a Hen Night, this is a new Baileys Classic, and a recipe that I have been asked to make again and again. Enjoy it with a cup of espresso coffee and a wee glass of more Baileys on the side. Enjoy! Karen

Ingredients
Mousse
- 6 free range eggs
- 225g chocolate, minimum 75% cocoa solids
- 4 tablespoons (120mls) Baileys Chocolat Luxe
Baileys Cream
- 200mls whipping cream
- 2 tablespoons icing sugar
- 3 tablespoons (90mls) Baileys Original Irish Cream
Topping
- Grated chocolate
- 50g toasted hazelnuts, chopped
Note
A decadent and dreamy dessert - this chocolate mousse has a generous slug of Baileys Chocolat Luxe in the mousse and then Baileys Original Irish Cream in the creamy whipped topping - served with a scattering of grated chocolate and crunchy toasted hazelnuts, this is dessert to delight all who are luckily enough to eat it!
Directions
Step 1 | Make the Baileys cream topping first: Whisk the cream, icing sugar and the Baileys with a hand whisk until it holds gentle peaks – be careful not to over whisk it as it will split. Set to one side. |
Step 2 | Make the chocolate mousse: Break the chocolate into pieces and place in a bowl that sits over the top of hot but not boiling water. Heat the chocolate until melted. |
Step 3 | Separate the eggs, and then whisk the egg whites until they hold soft peaks. |
Step 4 | Mix the egg yolks into the melted chocolate and whisk in a quarter of the whisked egg whites, along with the Baileys liqueur. Gently fold in the rest of the egg whites, mix well, and then spoon the chocolate mousse into 6 glasses. Put the mousse in the fridge to set for at least two hours. |
Step 5 | To serve, spoon the Baileys cream on top of the mousse and sprinkle with the grated chocolate and toasted hazelnuts. |

Nikki Henderson says
This looks and sounds amazing. Is it possible to use just normal baileys in the mousse, as I don’t have the chocolate lux one?
Karen Burns-Booth says
Hi Nikki, that will be fine! ENJOY! Karen xx
Ida says
I made this twice now – once where it worked out and once where I forgot the cream should go on top AFTER it had been in the fridge, so that one was more like Bailey’s soup… That made me think, though, is there a reason to make the cream first and then leave it until the mousse is set? Couldn’t you just make it after the mousse is set?
Karen Burns-Booth says
Hi Ida, The cream needs to be added at the end so it does not dilute the mousse and it has a chance to set! Karen
